Their cheesecake’s been tagged as being “The best Cheesecake of the world” “Michelin-starred cheesecake”. Also dubbed as “phantom cheesecake”, their cake is really so hard to get one.
In this video, we are going to recreate Tokyo’s most famous MR. CHEESECAKE’s baked cheesecake
with the original recipe provided by their Founder Chef Chef Koji Tamura
and this cake is GLUTEN FREE!!!

Ingredients: (18cm x 9cm)
200g Cream cheese 크림치즈 奶油起司 忌廉芝士 クリームチーズ
100g Sugar 설탕 砂糖 グラニュー糖
180g Sour cream 사워크림 酸奶油 酸忌廉 サワークリーム
50g Greek yogurt 그릭 요거트 希臘優格 希臘乳酪 ギリシャヨーグルト
2 Egg yolks 달걀 노른자 蛋黃 卵黄
(The original recipes request 2 whole egg)
(원래 조리법은 계란 2 개를 사용합니다)

9g Lemon juice 레몬즙 檸檬汁 レモン汁
20g Corn starch 옥수수전분 玉米澱粉 コーンスターチ
100g Whipping cream 생크림 鮮奶油 忌廉 ホイップクリーム
1/4tsp vanilla bean paste 바닐라빈 페이스트 香草莢醬 バニラエキス(シード入)
1/2 tonka beans 톤카 콩 零陵香豆 トンカ豆
50g white chocolate 화이트 초콜릿 白巧克力 ホワイトチョコレート

Gorgeous recipe. Especially the 3 methods to eat it changed the entire experience. It tastes blissful after 1 hour of thaw

Maybe next time you can sift the batter in another bowl and transfer to tin instead of directly sift into baking tin. So you have no worries to make dirty of the parchment paper and that will be lot easier.

I tried baking this at your suggested temperature but the top didn’t take much colour like yours ( I did preheat the oven ). What can I do to fix this?

I just baked but the cake is broken after I took out from the mold,I extended the baking time already but it’s still no work

Broken? Did you use hot water for water bath? And check your oven temperature?

Can I replace corn starch with tapioca starch? Greek yogurt refers to plain unsweetened yogurt too? Whipping cream can replace with heavy cream?

Pru Tai never try to use tapioca instead of corn starch before, I think the texture may not be the same use heavy cream is ok

This is their original recipe…I prefer to eat when the cake is frozen and ice cool…you can taste more of the sour taste than sweet

剛烤完還是很軟的...凍了再食就剛好 每家烤箱出來的效果都有差異, 想硬一點點可以多烤5-10分鐘 想上色的話...可以在烤的最後5分鐘放在烤箱的頂層

bumble .bzz you can use whole egg…but egg yolk provide the flavor and moisture…while egg white provide air
