Tomato and Salmon Salad 

This week, we’re preparing one of the last summer salads, and here in Spain, we’re still lucky to have some delicious late-season tomatoes to work with! This salad combines fresh, vibrant ingredients with a creamy dressing, making it the perfect light meal as we transition into autumn.
Here’s what you’ll need:
Smoked salmon
Cream cheese
Greek yogurt
Tomatoes
Gherkins (pickled cucumbers)
Fresh coriander (or parsley if you prefer)
Black pepper, olive oil, vinegar, and salt
Instructions:
- Start by chopping the tomatoes, smoked salmon, and gherkins into bite-sized pieces.
- In a separate bowl, prepare the dressing by mixing the Greek yogurt, cream cheese, olive oil, black pepper, salt, and vinegar.
- Combine everything and toss gently.
- Finish by topping the salad with fresh coriander or parsley.
