You'll need
3 eggs
1 tomato
1 tbsp butter
1/4 tsp salt
1/2 cup mozzarella cheese
2 tbsp feta cheese
Parsley
Here's how
Peel the tomato skin and dice it into small cubes.
Place the butter in a pan on the stove and melt it over low heat.
Add the diced tomatoes to the heated butter and cook until the tomatoes release their juices.
Break the eggs into a suitable bowl, add salt, and whisk the eggs thoroughly using a whisk.
Gently pour the beaten eggs over the cooked tomatoes.
Add the diced feta cheese, and then add a bit of shredded mozzarella cheese on top of the eggs.
Allow the omelet to cook for about 1-2 minutes. While cooking, be careful not to set the heat too high.
Cook the omelet until it reaches your desired consistency, checking it occasionally.
Once done, sprinkle some fresh parsley on top. Enjoy!
