I just started brewing my own alcohol because of your videos. Does you recipe book talk about specific sanitizers, acids and nutrients that you add? Also please post more videos! They are great!
Sanitation I have had good experience with using Starsand for sanitizing. You don't need to wash of any of the soap and it is therefore super practical. Sanitation of ingredients For sanitizing the ingredients like fruit i usually soak them in boiling water for 5 minutes and remove the water with a strainer. I would not do this with berries since they are a bit to fragile. I usually use frozen berries since it's recommended to freeze any fruit for 3 days if they are fresh. Acidity For acidity Lemon Juice, or Citric Acid is great. You can always add this after fermentation to taste, and that will also make sure that the PH will not stress the yeast. Nutrition The micronutrients are often called Yeast Energizer and can be usually found at any brewshop. You can also use boiled yeast from another batch of brewing, but it is hard to messure out in the right amount. Yeast Any white wine yeast is good, but personally i think Kveik is a great option. This yeast will ferment well in almost any temperature, it can be reused, and produces a more fruity taste that compliments meads well. It is general verry forgiving and a great option for beginners. Measurement ABV I would absolutely recommend getting a hydrometer to measure the progress of the brew. This instrument will also make it possible to figure out the alcohol percentage when the brew is done. Take a measurement before fermentation and after to get the information you need. I purchased your book and have made the Apple Cinnamon. I racked it to the secondary and back sweetened it with a little honey 5 weeks ago. I bottled it yesterday. How long do you typically age it? My final ABV is 14.3%.
I have a few questions on the process of making mead that I'd like answered before I start, 1: How long can you let it ferment and what would be your recommended time frame be. 2: Where could I buy the yeast and yeast nutrients. 3: Can you put any kind of fruit in it. 4: Where could I buy things like the siphon and other equipment for the mead making. That's really all my questions.
So I’m making my second batch, first batch was amazing. I realized I had way too much honey to water when the process is done and I bottle it can I just add water to each bottle or will this mess with the mead. It’s about a gallon jar, 3/4 is honey and the rest water, plus fruits. It’s not stupid thick though.

Can horchata mead be made? Like would that be possible? I wanna learn how to make mead and if horchata flavored mead is possible, I’d like to make that into a goal along the way lmao
There's lots of different experiences people have reported using various types of yeasts. In theory, it should work but it might not achieve the results desired for ABV (gravity) or flavor
I've been dealing with this recently and saw your comment so I figured I'd chime in: Headspace isn't important really at all in primary fermentation because of the amount of CO2 that will be produced. It will fill all of the headspace allowing no oxygen in. In secondary fermentation and after bottling though, it is pretty important to leave as little headspace as possible. Leaving too much headroom (filled with oxygen) oxidizes your mead and creates off-flavors. If you are in a bottle or jug that has a neck, try to get it to the neck if possible to minimize the exposed surface area. Good luck brewing! Cheers!
