Ice needs a nucleation point to form, which is what he is talking about with the ice crystal. The chain reaction is what forms it into ice. If this doesn’t happen, water can remain liquid below freezing . It’s actually easy to see.If you put distilled water bottles in the freezer for the right time, you can see the water turn to ice when you grab it because the movement of you grabbing it will form an ice crystal and start the chain reaction. The coaster was a decent option since its fairly water repellent. The only reason it didn't work was because he slowly slid it out from under the glass instead of taking it off fairly quickly. That made the surface of the water unstable the entire time he was moving the coaster.
