Honestly with the way crafter leveling and gearing works, it's best to level them all in tandem with gatherers and that's what I'd recommend most people. I'd only recommend leveling one or two if you're lazy or don't feel like doing them all and in that case, alchemist for potion crafting or culinarian for food crafting are safe bets. They all depend on each other in high end crafting otherwise and you usually need multiple to complete an item. The only other way to look at it is if you like crafting glam weapons for yourself since certain weapons usually come from certain jobs like red mage and goldsmith or bows from carpenter (but it isn't always consistent either)

if you sell materials you should check the recipes they're used in and sell in stacks that match. for example if you sell some ore and you see that 3 of those are needed for one bar then put up 3, 6, 9, 12, 15 and 30 stacks. one of each stacks should be enough if you replace them quickly enough after they sold. if you now also check orders of other people you can sell more precisely. (A bit exagarted): If someone sells 99 pieces for 250 gil and the next person sells 3 for 400 gil then just throw your stacks in for 400 gil. people will most likely buy your order even if it's not the cheapest because they may just need to craft 2 bars so 6 ores for 400 gil is a better deal than 99 ores for 250 gil. and also in regards to thr last point: if you want to go even deeper then check what the bars are used for and try to estimate how many the average person would need. Lets stay with my example of bars. And lets say you can only craft nails out of those bars and you need 2 Nails for what ever you use them for. Also 1 bar per nail crafted. In that case you can expect that most people wont just buy 3 ores because they need 6 to craft 2 bars and then craft them into nails and use those. so instead of selling 3 stacks you should rather sell stacks of 6, 12, 30 and 60. Sorry for my bad english it isn't my first language. But i wanted to try to give some tips on how to sell faster (and sometimes even with higher profits). I hope it's all clear enough to understand ^^
