So weird now my prayer plants and snakes have established new growth in the wintertime. I'm thinking its all about light cause I've recently moved them to brighter light at least here in Arizona.

Do you have indoor heating?. Subtropical plants like ZZ and snake plants respond to temp more than any other variable. In their native habitat, they will send out new shoots when they sense a temp increase (spring), without having any water for 6 months or more.
