My kitchen has extended into the dining room with a wall of metro shelving that holds an ever expanding collection of Le Cresset and skillets. I cannot imagine when it’s going to stop. Husband doesn’t complain because he gets to eat someone else’s cooking most nights.

The M &S was my first carbon steel pan. It cooked fine, but I wanted to season a pan from the ground up, so I moved on to a Matfer a few months later. I haven't used the M &S since, but am keeping it for camping, etc. Not a bad pan for a beginner, or for the price, IMO. Thanks Uncle Scott for all the informative and funny videos, keep em coming!

No I had no issues with the seasoning at all. But I was a little skeptical about what it was made of. It seems more like a coating.

I have a de buyer crepe pan that I love now, but dang it took me a long time to figure out seasoning etc. (your channel helped a lot) I also bought the oxo pan and I liked it so much I also bought the oxo wok, which is not really a wok but it’s great for stir fry and can hold lots of food without spilling over the edges. I think the oxos are beginner friendly and at a good price to start a CS collection. I like that the handles are oven safe (remove the silicone first). Also, as a woman, I appreciate that they are on the lighter side. That being said, I’m glad I have them but my next one will be that gorgeous omelette pan you have from de buyer when they get back in stock. I also dream of a Smithey; they are works of art.

Be advised that Smitheys are on the heavy side, especially their cast iron, and seasoning them has been super tricky for a lot of people. That can be mitigated by boiling equal parts of water and vinegar in them for 20-30 mins to create a matte finish to which seasoning can stick more (there's something about the chemistry there that goes beyond "micro-etching" the surface for the seasoning to adhere). Their hammered carbon steel pans are indeed gorgeous though.

I recently bought the 12" OXO, Merten & Storck, and BK carbon steel pans (all made by The Cookware Company) to see if there was any difference. The only difference is the handle, and weight. BK has a nice rounded handle, but because of that handle, it's also the heaviest. Merten & Storck, and OXO were within half an ounce of each other in weight, and they both had pro and cons as far as which handle felt the most comfortable, but other than that, there's no difference in the pans. I kept the OXO one for the silicone handle, but Merten & Storck felt the most balanced. If I didn't mind the extra weight, I probably would have kept the BK for the rounded handle. They all arrived with a silicone, protective coating, so eggs slide around like Teflon, but that'll wear off as I use it, and season it, as it's supposed to.

Hey Unk, did you ever get to reviewing the Merten&Storck pan? I can't seem to find it. I just received it and haven't used it yet. You got me thinking there might be some chemicals on the pan.

I started the review then abandoned it because I just didn't feel like I had enough knowledge to judge that cooking surface. It has some heat treatment that makes it a little different than the traditional French-style carbon steel I am used to.

Scott - I enjoy your videos! I have an OXO andd am trying to perfect my seasoning game. Seems no matter how I season (oven or stovetop) or how many times, when I cook my eggs they get a brownish/black color on them that I beleive is the seasoning coming off the pan. I use grapeseed oil to season and butter to cook on as low a heat as possible. Any thoughts or suggestions?

I know I’m late but it seems like the “seasoning” from the factory is actually a nonstick coating. The sparkly blue coating made me cautious, but the fact that any oil or water I put in it beads up all but confirms my suspicions.

The OXO and Merton and Stork pans look a lot like my "BK Black Steel" pre-seasoned carbon steel pan - which I really have enjoyed using. It's also made in China, and has virtually the same rounded sides and coloration as the two pans in the video. TV sets, computers, etc. are often made in the same factories, to virtually the same specs, but have different brand names affixed to them, The same thing is true of major appliances like stoves, washers, etc.

Regarding restaurant utensils, I don't have a problem using them because in my career I became familiar with commercial/industrial sanitization processes and am 100% assured of their proper sanitization. The effect on the environment of the associated waste products is another matter... That said, instead of paying a surcharge for new utensils you might consider a Hobo Knife, which is a folding pocket knife with a fork substituted for a second blade and a mechanism to split the knife and fork part for use. Case makes one but it includes a spoon that to me makes it too thick for convenient pocket carry. The one I use is sold by A.G. Russell called the Boxcar Jack (because Case has a trademark on the name "Hobo Knife") and although the Boxcar Jack is made in China, A.G. Russell has excellent spec and quality control over their Chinese suppliers and their Chinese-made products are as good as any production knives out there and better than many. Both knives are finely crafted products with a variety of good looking handle scales that make them much classier than those steel or aluminum connecting utensils for backpacking and camping. I take mine to restaurants on occasion just for fun as a pocket knife enthusiast but it'll work for the germophobes out there as well.

I bought an M&S 12” pan thinking it was German. 1.4mm thick, not 3 mm thick ,like my deBuyer. Had a weird nitrified coating, not seasoning. In short pure scammy marketing of Chinasium crap….then I used it. Expected it to warp, burn etc. NEVER HAPPENED.surprise. I use it,it works just fine. No one more shocked than me.

My neighbors bought the OXO and said it's the best carbon steel pan they have ever used. I bought the OXO as well and it is spectacular. Also, it has never warped like my the Matfer spinners I will never buy again. I can cook my eggs low and slow on my OXO and eggs slide like they are on ice. I can also cook on high heat on the stove and oven without it turning into the Matfer spinner. It's a shame you never used them from what I can see in your videos.

Hi. Out of curiosity, can you try removing the factory seasoning from Oxo? Using heavily acidic products. To see the quality of seasoning at least. I bet there is no other use for these pans -- I agree on buying EU/US products when it comes for food safety to say at least.

@@UncleScottsKitchen In addition I have a Matfer 11 7/8 and a Lodge 10”. The Merten & Storck I have is an 8” and as such it doesn’t get used as much as the others. I will say on day 1 it fried eggs with no issue and has only improved with use. Of importance, this pan is much thinner than the others so care must be taken not to scorch the food.

Scott, an English gallon is bigger than an American gallon. The British Imperial gallon is 4.54 L (160 fl oz), while the US Customary gallon is 3.78 L (128 fl oz)

Do you have an update on M&S? I've recently bought that pan as my first experience with carbon steel and it's so awful that I don't think I'll use this types of pans anymore. Everything sticks to it apart from the seasoning. I have to scrubb it and reseason it after every use now. Thin layer of sunflower oil, oven on 250C for 1 hr or a bit more. It comes out nice but as soon as I cook something the seasoning is gone and the area where the food was is much brighter again and some of the food sticks so I have to scrubb the pan again. I've read myself up and watched many videos before using it to make sure I do it right but this pan remains mostly unusable for me. It's just too much work and too poor performance for me to continue to bother with it. It has put me off all carbon steel. Stainless steel works so much better for me and it's so much less work trying to maintain it.

In one of the other Pancasts I updated it and said I stopped reviewing it. It's just not the classic, French-style carbon steel that I am used to and that I cover on this channel. Don't give up on carbon steel! Check out a De Buyer Mineral B or Mineral B Pro and see what you think!

Lets me just say this, I think the OXO, the Merten & Storck, as well as the not mentioned BK are all the same pan, most likely made in the same place. The only difference is the handle that tells them apart. That is why the article only reviewed one of the three. How they came up with their "favorites" is beyond me. I guess they prefer the light weight ones. Although I think that Smithey pan is pretty heafty.

@@UncleScottsKitchen Yeah, silly move on their part. Why even mention it? They put Mauviel on the list and not Matfer or de Buyer. Why? I guess because the Mauviel is the lighter of the big three. I would hate for you to spend your money on the BK. Just check it don't buy it. Wouldn't surprise me it there are others.

This brand seems the same as the two mentioned: Thermalloy 10.2-inch Black Carbon Steel Frying Pan. I have 5 debuyers and a Merton Stork and I like them all - they all have a use.

For all the downers I have on Chinese goods, if there is one thing they should come good on it is a carbon steel pan.. What do you think woks are.. This is sort of right in their wheelhouse, it's what they do and have been working with for ages in their culture.

Huge difference between New York banning gas hookups in new construction and taking away gas stoves, per previous nutter pronouncement. Everyone gets to keep their gas stoves, as predicted. Time marches on. Just like no one took away carburetors but you won’t find one in any modern car because they’re grossly inefficient and finicky. Onward and upward, in spite of any fuddy-duddies. I’ll keep my bajillion btu gas stove until I move. If I move somewhere with a gas hookup, I’ll likely get a half-bajillion btu gas stove (it’s not the size of then burner, but the how you spin the dial) and enjoy it. If no gas hookup then I’ll convert to giant-coil induction. It’ll feel wrong and sterile for some time. Then I’ll enjoy it. No one is coming for your gas stove or to regulate unnecessary paper towel waste. Thinking otherwise is just victim fantasy… and anyone is free to indulge for as long as it makes them happy but no one will be beating down the door to fulfill it.

Oh, but they are! And with modern American appliances having about a five year life span, the de facto ban just takes a few more years to implement, yet doesn't seem like a ban at all.

@@UncleScottsKitchen devices are widely available today and will be for the foreseeable future. Many, if not all, limits on *new* gas hookups exclude commercial properties which means that even if there’s a slowdown in production of consumer gas stoves , commercial will be an option for quite some time. Again, limiting gas hookups on new residential construction has zero impact on existing residential connection nor on devices available via the free marketplace. Already though (prior to any new construction limits) *consumer* demand for gas appliances is slowing as everyone looks to take advantage of solar, safety and convenience of induction, etc. The free market will have the ultimate choice on product availability, just like with carburetors and coal burning furnaces. Time and fickle consumer desires march on, unabated by FUD-mongering and unbridled victim fantasy.

In regards to the restaurant utensils, I did 13 years of restaurants and the soaps and sanitizers that they use to sanitize and wash are insanely powerful. I may be a little of a bit of a paranoid person, but I actually don’t trust restaurants and hotels to give me brand new, unused things that I would pay for like the utensils and pillows. I see them just repackaging them and selling them again. In theory yes I could take them with me, but I only have room for so many utensils and pillows.😅 Thank you very much for sharing the food and wine article. I don’t trust a lot of those especially if they’re not using any kind of oil or butter. Tells me they don’t even know what they’re doing. Thank you for keeping an eye out on that and researching it.

The ban on gas in NYC and State wide is for new buildings only...no one is coming door to door removing gas appliances... That said i can see them later passing a rule that says as gas appliances age out and are replaced, it has to be replaced with electric powered ones and when kitchens are remodeled they are required to remove gas . So this woudl mean new heat pump dryers, heat pumo water heaters, heat pump space heating, electric ovens, and induction cooktops/ranges as you do improvements... Its not about the gas cooking...its just a casualty of the war on the big gas consumers - heating and drying uses. Its easier to pass a blanket ban on new connections rather than to cherry pick things in new construction....

Uncle Scott, I was sucked in by the Germany lies on my 12" Merten and Storck carbon steel skillet. I was very upset with their lies and slimey advertising, and confounded by the nonstick surface. I was about to toss it in the bin and then remembered sometimes it's about the cook and not the skillet. So I burned off their curious nonstick coating and seasoned it with canola oil. It is 1.4mm thick compared to my deBuyer at 3mm so expected everything to burn and the pan to warp. that did not happen. I use the pan for scorching brussels sprouts and asparagus after blanching, works well. Like the size. Very light, 1.5 kg compared to my Lodge cast iron 12 at 3.5 kg. So despite being deceived by Food and Wine, and this importer of Chinasium crap, I am still using it selectively. It works. Best pan?? not by a long shot. That goes to deBuyer for CS and to Stargazer for CI skillets....I have and use them all.

I'm curious if the OXO and Merton & Stork pans weigh exactly the same. I think you're right to be suspicious, Uncle Scott. Kudos to your wife for spotting it. I don't put much faith in the snobby opinions from Food & Wine. Just saying...

Yes! They're within half an ounce of each other. BK, the other identical pan, is about 6 ounces heavier.

It's incredible to me that you can dis these pans without even cooking on them. What? Who cares where they are made or if they are sold under different branding? How do they cook? I don't much care for China's politics but if you think Chinese products are substandard then you probably have to throw away half things in your house, your iPhone, iPad, appliances, etc etc etc. It's not 1990 anymore. China still makes some cheap junk sure but they also make superb quality as well, and lots of it. I have heard positive things about both these pans. I have some de Buyer pans but the cs ones are on the heavy side and that's why I'm trying to get away from cast iron. A good light 12" pan we would actually use a lot.

I get the sticking too in mine, but that article makes it out like they cook eggs with no fat and they don't stick... I don't have high hopes of reproducing that.

I really love uncle Scott’s shows. But I would have more respect for him if he immediately returned the two Chinese pans. He needs to maintain a minimum threshold of quality here. Those are private label pans from China. Don’t play the game. Reject them out right. Return them to where they were purchased. Give us at least a minimum level of quality here Scott. If you’re bored, move onto a different category of cookware for God sake

I enjoy your cooking content. Could very much do without your editorializing. For what it's worth. Not gonna unsub because you make good content and I'm basically used to it at this point, but would rather not have injections of Tucker Carlson into your otherwise high quality analyses.

Thanks cdub! It's completely perfectly fine to disagree with me... we're just yapping about beer and food stuff. We'll stay out of most all politics unless there is something to do with gas stoves, alcohol, food,.etc., but I think it's OK to talk a little about the stuff that affects food/drink/kitchen equipment without going off the deep end. I hope, anyway!

Those two pans sounds like a carbon steel wok when you hit them. I'm guessing they're just thinner metal. Because it doesn't have as much thermal mass, they're best used on one of those jet engine burners... I don't do a lot of wok stir fry for that reason, a typical stove can't get a wok hot enough.
