YUM! I'm still getting to know this amazing world. Is whole-grain a thing in Mexico? I think they all use all-purpose flour from the store. But I wonder if there are one or two out there milling their own wheat.
I wish I could have showed more of these places to you guys. But I was on vacation and trying not to work too much, haha. But I love learning about international breads.
There are panaderias like these all over Texas, and I grew up frequenting them often. I’m afraid these bakers only use processed and refined flours and probably gmo sugar, though. I think the only grain maybe ground fresh is corn. 😕
In the U.S. probably ha In Mexico, I'm sure they use white flour but what I liked about them was they were very common little bakeries and bread is made fresh. It was great to just see a regular bakery that is just a bakery!

I have a video showing you how to make croissants with freshly milled wheat! Takes time, but SO good and doesn't spike the blood sugar like they usually do with white flour. :-)
What a coincidence, jyst started watching your channel about a week ago and now i see you in my hometown where i grew up, and yes Birote as it is known is unique to guadalajara with a hard salty crust that is used for tortas ahogadas.
Yeah I hear ya. That was the main downside was they don't use freshly milled wheat BUT I am supportive of these small bakeries that make bread themselves to sell. We just don't have these little bakeries in the U.S anymore. It's a tragedy.

I'll feel it the next day but... they are literally the best melt in your mouth authentic Mexican bread . And yes. I love supporting small bakeries.. we have a sourdough bakery about 25 min from home. Also not home milled but I'll go every few months or so to support. Also! Look up proof bread on you tube! I would like to visit their locations one day
We are blessed in North Carolina!! They are in small towns! One in Asheboro and one in Biscoe!! Mexican pastries are not as sweet as American but so good!! Their bread with cream cheese and jalapeño baked in the middle is my absolute favorite!! Now I’m hungry bye Ya’ll, I need to go to the Mexican bakery!!
It's not coincidence I'm leaving at 2 in the morning to go back to Mexico where we started our family business and I'm doing a pasteleria... literally taking my wheat grinder sis. God has called me there and this is my confirmation of my calling ❤ I love How Jesus talks to me.

Ah thanks - my husband's Spanish vocabulary came up short that day, haha. And I've forgotten most of what I learned in high school Spanish. But they had such a variety there, it was all good.
