Good idea for the dash mini griddle. Personally I would have seasoned the meat with some garlic and onion and/or at least some Italian seasoning. Per my preference I brown the tortillas on one side. Then I flip them so that the raw side is facing outward. Then fill. I don’t tend to eat ground beef. I eat more ground pork. My stomach doesn’t do well with ground beef and I’m allergic to chicken and turkey. But that’s just me. lol. Always love your ideas. BTW I’ve been using my pie maker and mini griddle a lot now. It’s so easy to make a low sugar pie with Trader Joe’s pie crust. I pinch off a piece and form a ball that I roll paper thin. Put bottom crust in while the pie maker is warming up and lid open. I cut in half a Granny Smith and add a handful of berries (usually blueberries), then teaspoon brown sugar and teaspoon of flour to absorb the berry juice and some cinnamon to taste. If I only use apples I skip the flour. So yummy. And I finally broke down and got a yogurt maker, the one I saw you review. It’s so much easier than hauling out my enormous crockpot. Much less work and smaller more manageable sized batches. Thanks for all your inspirational videos.
I found the minis, both corn and flour, at Publix supermarkets here in Florida. I made tortilla soup and warmed two mini corn tortillas at the same time in the mini griddle, cooking for 30 seconds, then flipping the two as if they were just one. I cooked the second side another 30 seconds for perfectly warmed soft tortillas! I then removed them, buttered them like bread, and folded them up to eat. Delish! I will have minis forever! I also made quesadillas for Hubs and me on another day. Muy bueno!
I use La Banderita Carb Counter Street Taco, 0 grams Net Carbs, 20 calories, Zero sugar. Has "Keto Net Zero!" on the package. You get 16 flour tortillas per package. I buy them at Smiths. I also heat them up one at a time. The floured ones shape into the griddle as you press with fingers making a pocket. Then I add chicken or hamburger with cheese and bell peppers. Then put on the top one. I push down on the lid while the shells heat up and it seals them together.
