Here we compare our traditional Taiwan Dong Ding Oolong Tea with our standard/modern version. Traditional Dong Ding Oolong is well oxidized, but not roasted - offering a savory, pastry and sweet profile. Modern (or competition style) Dong Ding Oolong undergoes medium to heavy roasting, which brings out nutty, pinewood, and fire-roasted yam notes.
The modern version of Dong Ding Oolong came about as a result of merchants roasting previous seasonal batches of tea, and offering fresh new batches along with roasted, and sometimes aged batches. The roasted version eventually became more popular, and led to becoming the quality standard for Dong Ding Oolong Tea competitions.

I'm confused, most sources state that traditional dong ding is the one that is actually roasted and that the modern style skips this step..?

Hi, Yes, this is a common misunderstanding. What you stated is also true when comparing Dong Ding Oolong Tea with High Mountain Oolong Tea. The difference between these two most well-known Taiwanese teas is that High Mountain Oolong is less oxidized (greener) and unroasted. Dong Ding Oolong, as it is widely represented, is more oxidized and well-roasted. The name Dong Ding Oolong Tea was popularized by the development of the Lugu Farmers' Association Dong Ding Oolong Tea competitiion, which began about 40 years ago. The standard of quality that was set by this competition has varied somewhat over the decades, but basically it has always been a roasted Oolong Tea. Prior to the competition, tea farmers generally did not roast their produce. Roasting gradually became a thing as a result of tea merchants having left over seasonal batches which they would roast and offer as an alternative tea type to the original unroasted version. The roasted version gained popularity, and it also ages well. So this is how the local competition adopted the roasted standard of quality. Prior to the development of this competition, the name Dong Ding Oolong Tea was not commonly used. Tea from this region was mostly just called Lugu Tea. Lugu is the name of the township that is the home of Dong Ding Oolong Tea. Another great comparison video! I have become a great fan of this Traditional ECO-CHA Dong Ding. (I do not really like roasted teas and the reason why they have been roasted confirms my dislikes) PS: I like the comparison gear. I only got one competition cup, cannot remember where I purchased it from and cannot find it anywhere anymore.

Ah, yes. Dong Ding Oolong tea, also known as Concubine Oolong tea, is one of my absolute favorite types of oolong tea, I enjoy making this tea Gaiwan style...a very balanced, buttery character. Good comparison, and great video. I am also a tea drinker, of over 20 years. Bless. 💚🎧💚🍵

Thanks, glad you like the video! Yes, Concubine and Dong Ding Oolongs are processed in the same way, but Concubine Tea is made from leaves that have been bitten by the Green Leafhopper. You can read more about this topic by searching here and also on our site.😄
