Travel buddy cook up number 20, another dinner on the road, a long day starting with brekky at The Port Pitstop in Pooncarie, before getting some work done in Menindee, Sunset Strip and Broken Hill. On tonight's menu was sticky chicken drumsticks and seasoned wedges. The wedges definitely needed to full 3 hours and could of used another hour to be really crispy, but the meal was warm and delicious. This sauce I have done at home many times, however I did add a bit of plum sauce today for something different and it was a hit with the family when I got home. Aside from a little incident wandering off the road the day went pretty smoothly.
Ingredients:
• Chicken Drumsticks (you could use wings)
• Potatoes seasoned (add sweet potato for extra taste)
• The Sauce
• Honey
• Tomato Sauce
• Plum Sauce
• Black/hot sauce (Worchester)
• Sweet Chilli Sauce
• Sesame Seeds
• Paprika
*Remember its not perfect, compared to the way you cook at home in your own oven, but it's all happening while your driving and saving you time when you arrive at your destination or for your lunch stop on the road. Keep trying different foods and times and see what works for you and your family.
Normally I would Pre heat oven for 10-15 mins, then cook for an hour before rolling the pies over and turning off the oven using the residual heat to finish the job.
