You should also visit eastern Turkey but in winter. I live there. You will definitely see a different Turkey. We have amazing winter hotspots in the east. City of Erzurum and Kars, they are for winter sports and this part of the country known as the Siberia of Turkey with winters extending up to 6-7 months and temperatures dropping as low as -40C .

Devices in Turkey work in Turkish as the main language, but there is English and some other language support in the settings, and some movies have English subtitles or English language options, you just need to enter the settings. For your convenience, there are also English options in the main menu in the upper right corner of the screen. Otherwise, it means no English support. If you do not have a headset, they will give you a special temporary headset when you ask for a headset from the relevant personnel.

There are many bus companies and all run at different times, but yes, there are busses that go overnight. We would suggest chatting to the bus company a day or two before you want to travel to book your trip.

As far as we know, there is no train but with regards to the bus timings - there are numerous companies travelling to Cappadoccia and all at different times. You would generally find a bus leaving every hour. But we would suggest just checking with the company you would like to travel with beforehand 😊
I am visiting istanbul in end of february hotel's already booked in istanbul. I want to try the hot air ballon ride in cappadocia but i have no idea. Is it possible to travel from istanbul to capadocia just for hot air ballon and get back to istanbul in like one day or even same day? Or is there any travel agency that does that? Please any help would be appreciated
