The weird thing about the sheet bend is the way the inner configuration of the knot is identical to the bowline, if you disregard where the four ends go and disregard the fact it is tied with two ropes. That explains why it is so easy to undo even when wet, and why it is a knot that requires ongoing tension to prevent if from coming undone. If you try it out and seem to come out with a mirror image, remember that these knots have chirality, or 'handedness'. So don't compare a right handed sheet bend with a left handed bowline.

Not sure if it matters for your tests; the second way you tied it is preferred. The loaded ropes should be on the same side. Things that are important in one discipline aren't necessarily important in another. Rigging stem chunks with a running regular bowline without, say, a Yosemite finish, is standard, but in climbing it's never okay.
