Smoking Tri Tip, because of its quick cooking time, often ends up requiring a reverse sear to get a nice char on the outside. But preparing it on the Weber Kettle Rotisserie with smoke will give the meat that bit of crust which only adds to the flavor. Slicing this terrific cut and using it for sandwiches with a fantastic garlic aioli makes a wonderful meal.

I just tried doing tri tip on my rotisserie! I know it’s a bit more work with the set up and cleanup but I’m not sure I’ll go back to reverse searing after trying this! It was out of this world!

Excellent. I just found this vid a few days ago. Dry brined a tri-tip and prepared it just the way you instructed. This is now the only way I will cook a tri-tip.

You have this annoying habit of answering my questions just after I ask them (in my head). "Why is he only loading the charcoal on one side? Oh, slower cooking." ... "When are you going to add the hickory? Ok you're adding the hickory now." ... "Would you put a pan in to catch the drips? Ok you've added a pan to catch the drips." ... That sandwich at the end looked awesome. Nice and simple.

oh man that looked delicious. I really wanted to try it. I've never had Tri-tip, and more than that up until this past year never heard of it. Our markets in SC do not have it. I'll go by the butcher store here and ask about it. It is definitely on my list to cook if I can get hold of it. Ry, your videos are really getting to be spot on with a good mix of talk, music, not spending too much time in one place to make it flow. That is what I'm trying to learn how to do. One of your best cooks to me. Thanks-Phil

I thought for a long moment you'd put *ketchup* on that tritip! There was a sigh of relief when you said roasted red peppers. I bet it would be great with harissa paste, though.

Come to think of it, it's basically roasted red pepper paste with garlic, various spices, and hot pepper, so I think you more or less approximated it. I really love it on steak, though. Just a bit really complements beef very well.

3/4 cup mayonnaise, 5 peeled garlic cloves minced, 2 tablespoon lemon juice, 1/2 teaspoon salt. Put that all into a blender and mix until smooth. That's it :)
