Ingredients:
Oil - 2 tbsp
Ginger - 3/4 tsp (finely chopped)
Garlic - 3/4 tsp (finely chopped)
Green Chillies - 1 tsp (finely chopped)
Spring Onions (Chopped) - 1/2 cup (white part)
Capsicum - 1 cup (chopped)
Carrot - 1 cup (chopped)
Cabbage - 1 cup (chopped)
Salt - 1/2 tsp (or to taste)
Red Chilli Sauce - 1/4 tsp
Soy Sauce - 1 tbsp
Vinegar - 2 tsp
Schezwan Chutney - 1 tsp
Red Chilli Powder - 1/4 tsp
Boiled Noodles - as needed
Steamed Rice - as needed
Spring Onion Greens - 1 cup (chopped)
Instructions:
Prepare the Ingredients:
Start by boiling the noodles and steaming the rice. Once cooked, set them aside to cool.
Finely chop the ginger, garlic, and green chillies. Chop the spring onions, capsicum, carrot, cabbage, and spring onion greens.
Heat the Oil:
In a large wok or frying pan, heat 2 tablespoons of oil over medium-high heat.
Sauté Aromatics:
Add the finely chopped ginger, garlic, and green chillies to the hot oil. Sauté for a few seconds until the garlic turns golden and fragrant.
Cook the Vegetables:
Add the chopped spring onions (white part), capsicum, carrot, and cabbage to the pan. Stir-fry the vegetables on high heat for 3-4 minutes, until they are slightly tender but still crunchy.
Season the Vegetables:
Add 1/2 teaspoon of salt, 1/4 teaspoon of red chilli sauce, 1 tablespoon of soy sauce, 2 teaspoons of vinegar, 1 teaspoon of Schezwan chutney, and 1/4 teaspoon of red chilli powder. Mix well to coat the vegetables evenly with the sauces.
Combine Noodles and Rice:
Add the boiled noodles and steamed rice to the pan with the vegetables. Gently toss everything together to combine, ensuring the noodles and rice are evenly coated with the sauce and vegetables.
Finish with Spring Onion Greens:
Add the chopped spring onion greens and give the dish one final toss. Cook for another minute to allow the flavours to meld together.
Serve:
