I don't turn the TC off doing that kinda thing. It'll still spin up enough with it on to whip the tail a bit. It can bog down trying to get up hills though. I take ABS off though. Going downhills with it on essentially disables the brakes. No bueno.
Hi, yeah it would probably be possible with some sort of pannier frame either for soft or hard panniers. Failing that I dont know, the exhaust kinda ruins a lot of options.
