Megha Desai Hey there! Whenever you have more than one tier you need to add supports in the bottom so that it can hold the weight of the top tier without smooshing and collapsing on itself. Without the straws (or wooden/plastic dowels etc) the top tier would be too heavy and the cake would at the very least sag out the bottom.
One thing i admire about this lovely lady is that she MAKES all her templates herself. Which is soo cost effective rather than buying stencils and moulds.
I have always had condensation form on my cakes if they are in the fridge for more than an hour but honestly it has never been an issue. I try to bring my cakes out of the fridge into a relatively cool temp so that there isnt an intense temperature change and the cake can come to room temp gradually. In my experience if you just leave the cake alone all of the condensation will burn off and the cake is totally fine afterwards. I live in a relatively cool climate though, I have heard it can be trickier if you live in a warmer place but unfortunately I don't have any experience with that.
