chongqing used to be Sichuan province with chengdu so d hotpot pretty similar, next time try Beijing Hotpot its truly different, or Guangzhou or Dongbei foods ^-^

Cucumbers are eaten raw to relieve the spiciness and do not need to be placed in hot pot. Eating hot pot, drinking beer, can also reduce the spiciness. As long as Chinese people are not from Sichuan and Chongqing, they usually choose Double-flavor hot pot, and dare not order pure spicy food.

Each province in China has its own unique culture and cuisine, and even different types of hot pot. In my hometown of Jilin Province, you can taste different cuisines. I look forward to your exploration.

Sichuan hotpot and Chongqing hotpot are generally the same, so the dipping sauces are similar as well. The most basic recipe in Chongqing includes minced garlic, MSG, and sesame oil. In Sichuan, the basic ingredients are usually minced garlic, oyster sauce, and sesame oil. Other ingredients can be added according to personal preference. So next time when you have hotpot, just make sure the basic three ingredients are correct.

Chongqing hotpot is a chongqing special. I know a gal here who grew up in Chongqing and she told me that I would be so dead if I try a real Chongqing hotpot.

Chongqing hot pot is all about offals so it's very hardcore, but it may be a little bit weird for foreigners haha. We usually order dishes like duck intestine, chicken stomach, beef tripe, pork blood, pork kidney, beef or pork aorta etc and most of them only need like 10 seconds of cooking😋

Just a little extra info for you guys here. There are quite a number of types of hotpots in China and Sichuan hotpot is definitely among the most popular ones across the nation. As a Chinese from northern part of the country, I personally have never been a big fan of the dipping oil of Sichuan hotpot. But according to the locals, the oil not only add extra flavor to the stuffs you cook in the pot, more importantly it helps ease the spiciness to some extent. (And for people who can't really handle or enjoy the extreme spiciness, me included, they will often choose half-and-half soup base.) I myself would always turn to other dipping options like sesame sauce or vinegar & soy sauce mix. But its just my personal preference I guess. Looking forward to seeing you guys explore other parts of China in the future.

And in terms of checking whether or not the food is fully cooked, the rule of thumb, in most cases except for some meat and potatoes and stuffs like that, is to see if the food is starting to float in the boiling soup. If it floats, it's ready to eat, most of the time.

It's so nice of you. When people say their English is bad, your response is so wise and kind. Chinese is more difficult for foreigners to translate, however, we can type and input alphabet anyway rather than just rely on picture translation.

There is sesame oil in your bowl. The cooked ingredients should be fully dipped in sesame oil, which will allow some capsaicin to dissolve in the sesame oil and it will not be particularly spicy.

Usually, I will order some drinks or sweets to "解辣"(help with the spicies). Soymilk, coke, or some local sweet of Sichuan, like "冰粉"(icy-jelly with brown sugar) or “糍粑”(glutinous rice cake with brown sugar). New things like "冰汤圆"(a special ice-cream with bubble, glutinous rice cake and so on) are also very good.

You guys are so adventurous LOL. Maybe it's too late but I still want to offer some tips: 1. For someone not super good at eating spicy food, it's better to not put anything that looks red into your dipping sauce because the broth is already very spicy. (That tiny fresh chopped chilli pepper is especially spicy). 2. Cantonese sausage is not a common choice for hotpot in general, but maybe it's popular in Chongqing. Cantonese sausage has a very interesting texture and can appear in a lot of other dishes (like Bao Zai Fan) 3. Yes cucumber is quite common in China. But I feel people enjoy it more when served as a salad rather than a cooked dish. Definitely try 拍黄瓜(smacked cucumber, Chinese cucumber salad) if you come across it. 4. Take care of yourself. You might feel uncomfortable after eating hotpot, not because it's not clean, but because your stomache is not used to such a large amount of very spicy food. 5. Potatoes are common in China, but they are more used as a veggie rather than served as a staple food. 6. I recommend ordering dairy-based drink, that will ease the spiciness. 7. Chongqing and Sichuan hotpot have a lot of interesting organ choices (鹅肠goose intenstine, 黄喉aorta of cow or pig, etc.) Recommend you give it a try if you are OK with organs. 8. Kinda wise to not order leafy veggies with this red-broth only hotpot. It could be bloody spicy as it absorbs insane amount of broth.

Next time you order hotpot, order a YuanYangGuo which is like Yin and Yang that give you a choice of both spicy and no spicy soup/stew. Good job mate 👍 ❤

You should order a double-flavor pot (half spicy). I guarantee you'll feel a little uncomfortable when you poop the next day. Great video. Your pronunciation of Chongqing(重庆)and Chengdu( 成都)is very good.

Actually, many Chinese people are not very receptive to the local hot pot in Chongqing because it is just too spicy and you may feel stomach pain if you eat too much of it. Supposed that the food around Jiangsu and Zhejiang in China might be more friendly, such as Suzhou and Wuxi. People there love sweet dishes.

重庆火锅的辣是全国出名的,我们普通吃辣的中国人到了重庆都只敢点微微辣,所以对你们不能吃太多辣的外国人来说最好的选择是微微辣+其它锅底的组合,你们今天点的菜,除了牛肉片其它的都需要在锅里煮个十分钟左右更好吃,黄瓜、南瓜、土豆都要煮烂一点,会更加软糯入味,牛肉片只需要在热锅里涮烫10秒左右,牛肉慢慢变色了直到粉红色就可以吃了,这样最鲜嫩。

One big advice for food try ChaoShan beef hotpot, it is not spicy at all and it will blow your mind away, the texture of the beef should be a new world to you, I definitely recommend you look for a one with high ratings and they are easy to find in any big cities!🎉

Chinese parents would teach children how to eat hot pots, like how to boil the thin meat, how to make dipping sauces and the boiling time for each food. It supposed to make a big challenge for you to try hot pot without knowing how to eat it, hope one day there would be some introduction in the restaurant that can help visitors knowing how to eat hot pot hahah. BTW I practiced to eat a lot spicy food before the first time trying Chongqing Hot Pot, it is the spiciest hot pot in China, even many Chinese can not afford it, you are really brave👍

Great video! Just wanna share my experience about the Chongqing Hotpot: 1. Authenticity: try to pick the “crisscross” pots (i.e. the pots divided in 9 cubicles). That’s the most authentic Chongqing hotpot and the cubicles also divide the pot into different regions of varying temperatures which you can use to cook different kinds of food. 2. Know your limits: do pick the chilli hot pots (otherwise it wouldn’t be authentic) but unless you’re a pro, I’d suggest you pick the lowest chilliness level. Even as a southern Chinese who likes eating chilli food, I can only handle the lowest chilli level in Chongqing. 3. Dipping: best to let the waiters prepare the dipping for you as they know what is the most authentic. Also the 精油 (vegetable oil) is the soul of the dipping and the most important. 4. Vegetable oil: the oil in the dipping is very helpful because it cools down the food, dissolves the chilli in the food, and also forms a protective membrane around the food as you swallow. But after several servings you will find that your dipping will have become red due to the amount of chilli that has dissolved in it, by which time the dipping is no longer helpful. When you see this it is best to get a new bowl of dipping. You might need to refresh your dipping 4 to 5 times over the course of a meal.

As a Chinese, ChongQing is one of the spiciest cities in China, most Chinese even can't take the spicy level of ChingQing. I consider myself a spicy lover, there is nothing spicy in Canada for me, but I can only stand for mild Chongqing hotpot. For a spicy hotpot, the longer it boils, the spicier it gets. I can imagine how you feel lol.

You kissed the night view fron Haidilao because you couldn’t find the way the first time, also, hotpot, you need to order half half pot, and order some veggie and noodles or potato for the non spicy half pot to balance the spicy’ only locals can bear the all spicy pot, even Chinese from other provinces can’t take it.

You guys are so cute😂 For beef and lamb 🥩, I recommend to use the strainer ladle 🥄 to hold a bunch of meat so that you don’t need to cook them one by one and it’s less exhausted to hold. Beef and lamb usually are perfectly cooked after 15-30 seconds ⏰ , which are tender and juicy 😋 . For vegetables like potatoes and pumpkins 🥔, you can just directly throw them into the pot since they need more time. You can use your chopsticks to poke them to tell whether they’re cooked 🥢. Usually cucumbers 🥒 play a role of reducing spiciness by eating them raw due to they’re fresh and cool 🧊. However, these are all my personal suggestions, it’s totally up to everyone to decide how to eat, because it’s a lot of fun to explore the way of eating a new cuisine isn’t it❤

Chongqing hotpot is the most spicy one I have ever tried. Although ordering Yuanyang pot (dual hotpot soup base) in Chongqing will make some locals feel that we are a little "weak", it is best to choose Yuanyang pot to give ourselves “a way to live"😂.

I'm from Chongqing, China. Foreigners generally can't eat chili. I suggest Double-flavor hot pot, one side is spicy hotpot, the other side is light hotpot

重庆人表示很厉害,我在外地待的时间久了,回去吃怎么辣,隔天起来一定会拉肚子。推荐下次吃火锅的时候一定要喝饮料(唯怡或者王老吉)。还可以试一试重庆的江湖菜。

I'm not from the province but from my personal experience the pot gets hotter as you eat cuz the water evaporates and the broth gets more intense until the server comes adding extra base broth.

The reason for adding sesame oil to the seasoning is to make the food taste less spicy. The principle is to use new sesame oil to melt off and replace the hot pot's spicy oil, but the flavour will still be there. So next time you may just keep adding new sesame oil😆

Chongqing hot pot is really spicy and distinctive. The blending of this kind of dipping sauce is very complicated. Only when you try it many times can you find the most suitable for you. If you are interested, you can try Beijing copper pot shabu-shabu, which is bone soup base, not spicy. In addition, northern China generally eats three mixed dipping sauces: sesame sauce, sesame oil and green onion. Southern China generally eats garlic, millet pepper (this is an extremely spicy specialty pepper) and sesame oil. if you feel too spicy to eat, you must ask the clerk for help or drink an iced drink.

You are truly brave; most Chinese people cannot accept the spicier Chongqing hotpot either. Additionally, the quality of beef in China is very good, generally, it should be cooked for no more than one minute. If you like beef but not spicy food, I recommend the Chaoshan beef hotpot from Guangdong; the freshly sliced beef is exceptionally good.

Chongqing hotpot is challenging even for us spicy lovers in China, it's more spicy than Chengdu hotpot. They got different rate of spicy to choose(extra spicy, spicy, little spicy, little little spicy). For tourists and average spicy lovers, little little spicy is enough😂

If you eat something too spicy, I suggest you eat some dairy products, such as milk, yogurt, milk tea, rice and bread, which can also have a certain degree of neutralizing effect on capsaicin(I'm Chongqing person)

Eating cucumber I usually just dip them inside the spicy soup for two seconds in order to keep them crunchy and sweet..the meat and all fish..meat balls put them all inside the soup ..not the beef..uh the beef just dip inside for about 3/4 seconds...

as a Chinese from Shanghai, I will never try hot pot in Chongqing because it's the Mexican food in China. China is a country with size bigger than Europe and 4 times population than the US. Actually you are more or less like traveling in a continent than a single country. Travel from Shanghai to Chongqing is just like you travel from England to Turkey. You guys are so brave to try the hot pot in Chongqing without choosing the hotpot with options. Good luck to your stomach tomorrow 😅😅😅.

For my dipping sauce, I usually like to add a bit of soy and oyster sauces. Some green onions, sesame seeds or sesame oil, etc. I also add a bit of the broth that's boiling in the pot and give everything a good mix.

I saw you two taking hot port that OVER spiced for your level. Next time order Less spiced one. About the cooking time for beef, it is about 10 to 15 seconds will be good. but you add more time for other meals. When you visit Hong Kong, Shenzhen or Guangzhou, the restaurants always have staff (or client) understand English, ask them for cooking time, for personal source maxing, for balancing your order, I think that you needed to order more green vegetables, and normally green vegetables are not expences at all. ....... Hope you enjoy your trip. Best wish from a Chinese living in Toronto.
