A few words about my yarn choices.
I do not use yarn that comes from animals. I am vegan and so avoid any animal derived food or products, such as leather and wool.
I know many people believe using sheep and other animals for wool does not harm the animal, and in theory that should be true, but in reality that is not the case in most farms. I do hope that there are great people out there who take care of the animals, shear them gently and let them live their lives in piece even when it's not profitable but in almost all cases (certainly in large industrialized farms) that is not the situation.

As for the enviromental effects of producing synthetic yarns, I agree it is far from ideal. However, this is not a simple subject and the average person (myself included) does not know a lot about what goes into the production of each fiber. Cotton, considered natural and available also as organic, is a very thirsty crop that requires large amounts of water. So there are multiple factors to consider. Luckily the industry is responding to customer demands and it seems there are more and more options for enviromently friendly and recycled fibers every year.
I try to buy yarns for projects carefully chosen, making items I can use for years and even pass on to future generations to reduce waste.
I am far from perfect, always happy to learn. Everyone has their own journey and priorities, so while for some the enviroment is the top priority, for me right now it's not directly contributing to animal suffering.
I am always happy to discuss this subject as long as it is done respectfully.
