Hint for fresh sausages, after grinding let it sit in the fridge for 24 hours! That lets the flavors meld into the meat and some of the spices need the time to bloom with the moisture in the meat. I make hot Italian sausage in 10-15 pound batches! Friends always want some! I run some thru the sausage stuffer into brat size casings. Then smoke them and freeze. For a good quick supper thaw and grill until hot and the outside has some char!
