Turkish delight (lokum) is a traditional Turkish candy. This recipe is very poplar and you can find this candy in different colors, flavors and with different filling (such as pistachios and almonds). This recipe is based on starch and sugar, and it’s pretty easy to prepare.
You also might recognize Turkish Delight as the candy from The Chronicles of Narnia- The Lion, the Witch and the Wardrobe.

Ingredients:
For the candies:
3 cups (600g) Sugar
~3 1/3 cups (810ml) Water, divided
2 teaspoons Lemon juice
1 teaspoon Vanilla extract
2 tablespoons Rose water
3/4 cup (100g) cornstarch
Red food coloring (optional)
For coating:
1/2 cup (62g) Powdered sugar
1/4 cup (32g) Cornstarch
Directions:
1. Grease the sides and bottom of an 8-inch (20cm) square pan with vegetable oil. Line a parchment paper, grease the parchment as well. Set aside.
2. In a large saucepan combine sugar, 270ml of water and lemon juice. Set over medium heat. Allow to boil and let the sugar dissolves. Then reduce the heat to low and let simmer until the mixture reaches 235-240F (112-115C) (soft ball stage). Remove from heat and set aside.
3. In a separate saucepan combine cornstarch and 2¼ cups (540ml) water, stir until no lumps remains. Place over medium heat, stir constantly until mixture begins to boil and mixture has glue-like consistency.
4. Gradually stir in the syrup to the cornstarch mixture and stir constantly for about 5 minutes. Reduce the heat to low and let simmer for about 45-60 minutes, stirring frequently, until lightly golden.
5. Stir in the rose water, food coloring and vanilla extract. Pour the mixture into the prepared pan. Spared evenly and allow to cool for at least 4 hours.
6. In a big dish mix powdered sugar and cornstarch. Sprinkle some of the mixture over a clean surface. Turn the dough over and cut into little squares.
7. Coat each square with the cornstarch mixture.

Okay so I made this and it was exactly like the Turkish delight you buy in a shop. Tastes super good. The only down side is it makes your arm hurt after a while of stirring lol

I once had a Turkish delight years ago, my friend had a few but didn’t like their rose flavor, but I did so she gave them all to me. I hadn’t had one since but I didn’t realize how surprisingly simple the recipe is. But since I don’t have rose water I’m using tea

you dont need rose water. You can literally make this with any flavouring you want. orange blossom, orange, lime etc for more traditional ones or lavender, pineapple, cocnut etc or literally nay fruit infusion or tea for modern interpretation.

I don't know where the English people got their recipes for Turkish delight but the way they make theirs is quite different than traditional recipes.

It's how the western world has known turkish delights to have been made since the 1770's, when starch and processed sugar was introduced to cooking. Before that, it was sweetened with honey and not thickened with cornstarch. so that might be the "traditional" recipe, but also the recipes from Haci Bekir, the oldest confectionary shop in Istanbul, are like 250 years old at this point, so at this point, it's kinda traditional too, lol

I grew up in the 1960s in South Florida and my father had a variety of international friends and people in that air would exchange food as gifts especially desserts. Turkish delights was definitely one of them and they were delicious. Old World gummy bears.😊😊😊

Thank you for the video. I tried to make it with lemon and used turmeric for the colour. It seemed ok, but after a few hours it got all wet. What have I done wrong?

Chill for longer and when it;s on simmer, keep it on the stove for a bit longer.

Cook the sugar to 260F instead of 240F, and make sure you really cook the cornstarch mixture well

should the last stirring step take 45-60 minutes? because many times I tried, it didn't reach 15 minutes until the dough was burned into the bottom. And the color of the dough is also golden. even though I have stirred it without stopping
