Turkish Style Stuffed Eggplants and Peppers with Lamb - Kuru Dolma

Dolma means "Stuffed" in Turkish and there are countless kinds of dolma in Turkish cuisine, mainly referring to a family of stuffed dishes from Ottoman cuisine that can be served warm or cold. Some recipes contain meat, others vegetarian.
This one with dried vegetables and lamb ribs is the greatest of all dolma dishes, with its spicy, tangy notes from pomegranate and sumac and the incredible lamb flavor infused to the dolma. Dried eggplants, hot red peppers stuffed with bulgur and lamb mince and cooked with seared lamb ribs will give you an explosion of flavors.

Ingredients:
• 200 g lamb or beef mince
• 200 g bulgur (1 cup)
• Dried eggplants and paprika peppers (30 - 40)
• 1 onion
• 6 cloves of garlic
• 3 tbsp chili paste
• ¼ cup pomegranate molasses
• 3 tsp chili flakes
• 4 tsp sumac
• 1 tsp black pepper
• 3 tsp salt
• 2 tbsp olive oil
• 500 g lamb / beef ribs on bones (optional)

Thank you! Sumac is a spice made from the dried and ground berries of the wild sumac flower and is tangy with a sour and slightly acidic flavor.

I have not see dried eggplant like that at the store- that’s great that you can have them and rehydrate them. Love the tea you made with the sumac. I use a plate too when I need to keep things submerged. Lol Wow really pretty dish. Have a great week brother.

Now that is a pot filled with the some amazing food! I love the combination of lamb, bulgur and pomegranate molasses BTW, that's a really cool knife. It's similar to mezzaluna that Italians use for chopping/mincing. Awesome recipe!!

Yes, the knife is similar to mezzaluna in terms of function, it's called "onion knife" in Turkey, as it's mostly used in kebab restaurants for chopping onion ;)

The word dolma and the type of food itself is not Turkish. This is a good improvisation - it's true. But Turks should know that neither lahmajou nor dolma, pakhlava and other foods and meals don't have anything in common with their culture. And again, this seems truly delicious thing.

Dolmayı, sarmayı bizim diyen insan devamli yapar öyle hazir konserve sarmalar la, bizim milli yemeğimiz deyip sahip çıkılmaz... yunanlarin ve araplarin baklavasida, araplarin lahmacunlarida bizim ülkemizde yapılanlarin yanindan bile geçemez. "Dolma" is pure Turkish word man.Please do little research.For example look at "Nişanyan Sözlük". This is a Turkish Dictionary wrote by "Sevan Nişanyan". He is a Armenian. Moreover, I studied Turkish Language in University . Trust me. Dolma is a Turkish word. BUT Lahmacun or Baklava is not Turkish. You are right about that.
