I remember going with my grandfather, in SE Missouri, as he had a line strung in a river to catch buffalo fish with cottonseed cakes as bait. That would be around 1960. RIP grandpa.

I grew up in Arkansas. And we would catch clean and cook everything we caught.. we used to can the Buffalo. And use for making fried fish patties . We also did the turtles . Man that's good eating. Really like your videos

There is a way to cut out the small bones out of the back of buffalo when you are filleting. Also, if you're deep frying them whole, you can put many many slices across just the upper part from tail to head, which will make all of those bones go away.

HI,Mr.Magie I catch a lot of buffaloel and can a lot of the meat,if you would put 3-4 tbs of white vinegar and 1 tsp of canning salt the forked bones will melt cooked 15 pounds of pressure.Also lay the boney meat skin side up scratch through tothe domes not to cut thru the bone in several plcaces and tare there ,fry these pieces and brake into,the bones will come out inone piece.

Mr McGie if you White sausage gravy read this. Take your y bone meat and run it through a grinder and use it instead of sausage. I use buffalo and Asian carp. It is wonderful on toast. Enjoy

The meat taken off the rib cage like that has to be good Micah. I use boneless fish fillets coated in seasoned corn meal and deep fried to make fish poboys. A favorite of mine. I would love to try buffalo for that. Take care.

It looks like those fish have a really tough hide on them. With the fish I catch here, I wouldn't be able to pull the skin off like that because it would be tearing. I remember Mom canning fish years ago but I have never tried it. Great way to preserve it for future use. Best wishes!

Great video. Good advice about electricity *"failure"*. Gotta tip fer 'ya.... those old socks that aren't worth wearing anymore..., cut them into 2" band/sleeves and slide them over the outside of the jars before putting in canner. No more jars touching or rattling against one another, and they're reusable! I get about 4 sleeves from each sock. Heal portion is discarded (or goes in my gun cleaning kit). Never heard of the bromaline(?) trick before and I couldn't make out the name of that meat tenderizer you mentioned. I like to add a tablespoon of ketchup or tomato sauce in the jars. You'd be hard pressed to tell the difference between carp and salmon.

@@McGieHomesteadAdventures i worried all night about them old stray cats wondered if i made them sick ..probably the flavor of the cajun batter mostly it wasn't soggy but wasn't crispy like i prefer i never deep fry anything i like propane griddle , grill , oven, use a lot of cast iron just not much grease

Unless the fish doesn't have as much meat, I prefer the bone in ribs. More meat and better flavor. I notice how 99% of RU-vid fishing videos throw away the carcass after filleting but I think some of the best meat is on the carcass and I fry the carcass and get it crispy or smoke it. People are missing out. In other countries they will completely split the whole fish carcass or butterfly it and grill or fry it whole. Thats where I learned and it was the best fish ever!!

What big fish nice catch, I can see why madam Magdelesa who is a thoroughbred wouldn't eat the fish. Madam would have expected no less then a 5 star dish, if only you had put all the garnish trimmings with the fish and present it to her she would have eaten it.😂😂 Blessings

Buffalo fish are probably like carp or gar, people throw them away... what a shame. I'm pretty new to TN and haven't found any good running creeks or rivers yet here on the south Plateau, but I'll keep looking.

I had a bit buffalo fish but I couldn't get any meat off of the tail. It only had huge bones from the ribs down. I didn't know what to think about that.

@@McGieHomesteadAdventures I'll take a bowl of ground buffalo add an egg or 2 with some salt pepper chopped up onion red and orange bell pepper peppers mix in some bread crumbs stir it around make a patty roll it in flower then fry it. You'll jump out of your skin after that first bite. Lol

@@McGieHomesteadAdventures not at all . Between the grinding and the hot oil cooking they'll be totally gone you'll never know they was there. This is the only way I've found to eat the filets that actually gets rid of the bones. I call it buffalo burger.

12,001th! (This popped up after the potato video.) I have a good pickle recipe for these. If you like pickled fish oh there are good but need some fridge space. Have to keep them cold. It's a cold canning process. I've tried traditional canning them and they aren't as good as the cold canning. This way dissolves the y bones too.

Yes to both! The Asian carp have not made it to my local rivers, but someone gave me 3 of them and I did some experimental cooking and they were delicious!

Just look in April and the first of May. When they run you will see them in the shallow water spawning.

When you hang them up they can’t be filleted well at all….. the table allows you to get pressure on the backbone and get a close cut. In the air the fish is constantly moving and avoiding the pressure!

longbowbanjoAL Of that list I have eaten fox coyote armadillo and sauger. I don’t think it’s legal to kill flying squirrels and chipmunks ... which leaves mink and perch😂😂😂 we don’t have true perch in Tennessee..... people call bluegill perch here. Mink are here but not easy to find. I’m sur we can figure out something to do though 👍
