When my kids were you, before they started school, we would frequently eat dinner at my momma and daddy’s or my in-laws. And always Sunday after church. Looking back, I was so very fortunate and blessed. They wanted to see the babies and the babies wanted to see them! Now, I see my grown children at least every other day! God is so good!

I have a very similar recipe. My only tip is to soak the raisins in warm water while grating carrots. Drain them well before adding to the salad. They’ll plump up and be better than the occasional dried out raisins I find in the packages now days. I truly enjoy your channel

That was a standard recipe at our house, too, when I was growing up. I didn't care for it. We had to clean our plates anyway. Besides, I didn't like to hurt my mom's feelings. One day my big sister, knowing I disliked it, slid mine onto her plate when Mom went to the kitchen for something. Being an ungrateful brat, after that, whenever we had them, I'd wait until Mom was out of the room and slide mine onto my sister's plate. She'd slide it back, and we'd play "hot potato" that way until Mom came back. Whose-ever plate they were on when she came through the door had to eat all of them. 😄

Hi Tipper and Matt. One of the reasons I enjoy your videos is you remind me of things I forgot. Fond memories of trains, maybe words I rarely hear. Even though I spent most of my life in California, it doesn't matter. 60 years ago, California was very different, small town by the beach, pre tourists. A train with vegetables ran along the beach by our house. He would ring the bell for me and my brother. Now there are chic boutiques and cafes. I retired and got out of there. Tonight you reminded me of carrot and raisin salad. I used to eat this all the time. I can't even remember the last time I had it. Maybe 30 yrs. I used to cook onions in a skillet and put cheese on top. I learned to cook early. Blind pig and the acorn is very special to me. Thanks for the videos. Anna from Arkansas.

Thank you for the sweet memories that the 🥕🥕 carrot salad brought back to me. During my childhood, instead of mayonnaise, we added several spoonfuls of frozen pineapple juice concentrate. Then as an adult,I learned of this mayonnaise recipe . Another variation instead uses peanut butter and garnishes with peanuts. (But my favorite was the way I grew up with a sweet strong pineapple flavor 🍍😋)

Dear Ms. Tipper, The Carrot, Raisin and Pineapple Salad is an old favorite of mine. A famous cafeteria in San Antonio by the name of Lubby's made it very famous. These days I love it without the mayo especially with a very good fresh Pineapple. Now speaking of that Pineapple rind in your bowl, please do not give it to the chickens or compost just yet, let's make Tepeche. Cut the rinds including all outer parts and the core, no leaves, into smaller pieces and place in a large jug (I use a gallon or at least a 64 oz. Ball jar) cover with filtered water. Place a piece of cloth secured with a rubber band over the top and let sit for 3 days. Discard rinds and add a Piloncillo or 1 cup brown cane sugar and stir till dissolved. You can add more filtered water to your taste but it is best very chilled. Keep it refrigerated till gone. If you let it sit more than 3 days it will start to ferment so to keep it tasty but not sparkly keep it to 3 days. Then the chickens can have the rinds. Thank you. Enjoy!

I didn't like it as much when I was a kid as I do now. I think my daddy was the one who loved it because I remember that he was always the one in the kitchen making it. He always did help out when it was a big meal. He would make this and slaw and the giblet gravy. When I was pregnant with my daughter I craved carrot and raisin salad. It is delicious to me! All your videos are nice, but I especially enjoy the cooking ones. I love carrot and raisin salad and onions so these are great recipes! Carrot and raisin salad is popular where I live. Thank you so much!

Sometimes instead of raisins I will add dried cranberries to a carrot and salad. If I want to lighten up the Mayo I add some pineapple juice or milk before stirring the Mayo into the carrots. Yum.

Hey Ms. Tipper, Thanks for sharing these great recipes! The salad would be great to take to gatherings, I just might have to try it! Hope everything is going well with y'all. Little Ira was kicking up a fuss there in the background, so precious! Hope Katie is hanging in there. I remember how hard the first few months are. I'm glad she's got you and Mr. Matt to help her. I know y'all are a Godsend. Best wishes for Corie's safe delivery. Love and Best Wishes from Memphis!~

My mom used to make that carrot salad. It was a good winter salad, using canned pineapple. It reminds me of a Waldorf salad.

I’m from Canada, I grew up eating carrot salad! One little tip, when using raisins for cooking and baking, I always soak the raisins in water for about a half an hour before adding them to the batter or salad. Then they’re not so hard.

I've never heard of a carrot salad like that - I'm very curious to give it a try! I love the idea of the onions and cheese, yum, that is right up my alley.

I will be making the baked onions. I grew up in a home where an added onion and a potato will be added per person. Everyone left the table full and there was extra for later or lunch the next day. As for the carrot salad, I make a similar carrot salad, I don't care for raisins, but I like craisins, grapes, apples and pears as substitutes for the raisins. I also use yogurt instead of the mayonaise. Until next time much love and many prayers. 💖💖

Carrot Raisin salad is one of my favorite salads. I make using a fine grinder for carrots and use crushed pineapple. We have it every time we have fried chicken.

My Mama made a dish like your onion recipe. The only difference is she would put a layer of onions then a layer of potatoes. She peeled her potatoes and sliced them into slices about 1/4 inch thick. She added salt and pepper to the layers of potatoes, and sliced butter on the top. She didn’t add cheese, but that sounds really good. She called it potato and onion casserole. It really goes good with soup beans, cornbread and anything sliced up out of the garden. 😊
