Vic. Thank you so much for this episode. I remember as a child and a young man in the 50's and 60's helping my Grandmother make these. She was from the Alto-Adige region of Italy and this was one of her favorite dishes (mine too!) Since we could not get the traditional Italian ingredients, she used American substitutes. She used stale Italian bread, chopped onion and celery, eggs,milk, parsley, chopped celery leaves. minced garlic, and diced bacon, ham, and hard Italian salami hand made by my great-uncle . Then she would add them to the pot of boiling chicken broth ( hand made of course). When the Knodel, or Cadenli as the Italians called them, were ready it was "Tutti la Tavola e Mangari !. She didn't have to call me twice. There was nothing better on a cold winter's day than those incredible dumplings.

3 C grated leeks, 1/3 C finely chopped parsley, 1/3 C chives , 1/2 large onion camerilzed in butter, 1/2 tsp pepper, 1 tsp salt, 2 eggs, 1 C meat, 1 C buckwheat flour, 1/3 C milk. Wet hands with water and form large balls until they are slimy from the water. In boiling water - add & boil 20 minutes. Top off with butter, parsley and a julienne cabbage bed.

Vic! I love your show, your endeavors because you obviously didn't study the Stanislavski method, (and I say that with NY love) which screams to me that your passion is not hidden in "acting" but in your Topic! Your passion for Italy and it's fare and food....overwhelms my soul! Thank you for reminding me that one should follow their heart and speak from it! Much respect. Much love!

I thought Tyrol was in Austria? And she's speaking German!

tyrol is in Italy, unless it stretches into Austria, too, but definitely in Italy. Most of the people there speak german as it used to be Austria, before WW2

And a number want to return to Austria, so Italy bribes them with incentives via lower taxes and grants.

This is in South Tyrol (Südtirol, Alto Adige) which is part of Italy. But there is also North Tyrol and East Tyrol (Tirol), which are part of Austria. About 70% of the population of South Tyrol speaks german as their first language but more or less everyone speaks both german and italian moderately well. This restaurant is just a few kilometers from my parents house...

Thanks for the video! You never mentioned what you do with the egg shells from the beginning. Do you boil the knodels with eggshells in the water?
