Ingredients/
For the bread:
4 cups all purpose flour
1 cup white sugar
2 tsp. baking powder
3/4 cup softened butter or unsalted butter, just add 1/2 tsp. salt
1 1/4 cup fresh or evaporated milk
For the Ube syrup:
120 ml Ube Macapuno Condensed milk
30 ml water
Red/Blue food coloring (purple color wasn’t available)
For the Buco Pandan Syrup:
120 ml Buko Pandan Condensed milk
30 ml water
Green food coloring
For coating:
Desiccated coconut as needed
How to make:
Start by making the dough. Pre-heat oven to 180 degrees C.
For the bread:
In a large bowl, combine all the dry ingredients then the rest of the ingredients .Mix well until fully combined and a dough is formed.
Place the dough in a 12 x 8 rectangular baking pan lined with parchment paper. Stretch it evenly using your hands, a spoon, or a rolling pin.
Bake in a preheated oven 180 degrees C for 35 mins.
Remove from the oven and transfer it to a wire rack. Let it cool and cut into rectangles or bars. Set aside.
For the Ube / Pandan Flavors:
In a saucepan, add the water,Ube macapuno condensed milk & food coloring. Let it boil & with constant stirring until the mixture slightly thickens. Remove from the heat, transfer to a clean bowl, set aside, and let it cool.
Same procedure for the Buko Pandan syrup.
To assemble, soak the bars in the ube syrup. Shake it gently to let excess syrup .
Using tongs, roll the bars in the desiccated coconut making sure all sides are coated.
