love that not only you care about how healthy the cookies are, but how important the taste it would have! I don't like using stevia b/c of it's aftertaste so I'm glad you stuck with brown sugar! Maybe, next time you can consider trying coconut sugar?
The recipe looks good! I tried baked keto cookies by using monk fruit sugar but the aftertaste is horrible. I cant even finish eating one cookie. I love premium molasses sugar for baking as the taste is so good and unique. I will try your recipe but replaced the brown sugar with molasses sugar see how it taste.
