My guess on this is that Meggy turned to a human because she had no ink left. The reason Saiko said that she would die is the fact that there was probably a large chance that Meggy would. I’m guessing that there was a small chance that she wouldn’t. (Another reason why she didn’t die could be the fact that the machine got blown up before she died. This may have influenced her death and gave her body time to change her genes to adapt to her new situation of having no ink). This is just me theorizing tho.
