COOK TIME: 1 hour and 30 minutes
SERVES: 12
INGREDIENTS
For the sponge cake
4 cups plus one tbsp all-purpose flour, presifted
1/2 cup plus two tbsp arrowroot starch (can sub cornstarch)
2 1/2 tablespoons baking powder
1 1/4 teaspoons fine sea salt
1 3/4 cups organic sugar
1 1/4 cups safflower oil (can sub canola)
1/4 cup kabocha squash puree* (can sub canned pumpkin)
1 tablespoon plus 1 teaspoon white vinegar
3 tablespoons plus 1 teaspoon ground golden flaxseed
1/2 cup plus 2 tablespoons warm water
1 2/3 cups almond milk, plain unsweetened, at room temperature
For the soaking liquid
3 (13.5-ounce) cans light coconut milk, unsweetened
2 cups almond milk, plain unsweetened
2 cups pure maple syrup
1/4 cup cognac
For the coconut whipped cream
4 (13.5-ounce) cans full-fat coconut milk (with guar gum is ok but no other additives), chilled (see notes for tips on chilling)
1/4 cup confectioner's sugar
1/4 cup arrowroot starch
Zest from 1 lemon
1 tablespoon pure vanilla extract
1 teaspoon almond extract (optional)
For the strawberry sauce
16 ounces strawberries, hulled and quartered
3 tablespoons organic sugar
3 tablespoons lemon juice (from 1 medium lemon)
3 tablespoons arrowroot starch

Last week I made this cake with this recipe and it was delicious!! My friends did not belive me when I sais that the cake is vegan, everyone in the party love the cake and ask me for the recipe! I highly recommended everyone to try it.

Thank you so much for this video! I have wanted to make a vegan tres leches but considered it off the table since it has so much dairy to replace. This makes it seem like less of a challenge.

Well, since you asked, I’ll watch just about anything vegan. Lately I’ve been wondering about the possibility of black licorice (I’d use gf flour and stevia or something, but I can deal with that part).

Thank you for this. Even if I don't end up making it, more dairy-free content is always welcome. I'm tired of every cooking video these days having milk/butter/cheese without mention of how (if it's even possible) to replace it if you're lactose intolerant 😭

You nailed it! I didn't even use the cognac because I don't use alcohol in my diet and it was amazing! Everyone loved it at a Hispanic Night event I was a part of. I am so happy! Thank you for sharing!

By my calculations at my local store, doing this organically starting from nothing costs almost $100. This isn’t a commentary against the recipe or its author, but against the way healthy food is priced effectively exclusionarily.

Hello, thanks for noting this. Disclaimer- I did not do this 100% organically. I could see how at some stores if you bought all the ingredients OG and never used the leftover ingredients again it would cost $100. But because I bake frequently and will use stuff like vanilla and baking powder again, I actually spent less than half of that amount on this recipe. It is correct that vegan ingredients often cost more than animal-based, but I constantly remind myself that we pay for items like dairy in other ways, in literal terms like subsidies and more figurative ones like CO2 emissions. Regardless, economics are not the only reason I bake at home. A cake like this from a bakery would cost more than double what I paid for the ingredients. The main reason is for fun and fulfillment. Without that, it could cost $1 or $500 but I wouldn’t bother.

@@anitas457 I feel similarly to you as to why I continue to buy organic and pursue home baking, in addition to health✌️ How I wish the market wouldn’t effectively punish the humility and wisdom to be found in healthy eating just because they can and, as you note, subsidies are mis-directed. Thank you for a wonderful recipe. I do hope to make it someday and have it saved to a playlist for the purpose.🙂

Hi Ann! Anita hasn't tried this yet but feels quite confident you'll have success with a high quality GF flour :). Her fave for baking is the King Arthur brand.

I have not tried that yet but I would be pretty confident if you use a good quality GF flour like King Arthur brand, that's my fave for baking.

I love this idea, looks delicious. However.... ain't nobody can afford putting two cups of maple syrup in a single thing! A jug of maple syrup is like a 6 month investment.

@@Harpalyce I love all these ideas for substitutes! To make it more budget-friendly, I would suggest "pancake syrup" which is mostly corn syrup but with maple flavor, it costs a fraction of the real thing.

You can omit it. Just sub a little vanilla extract like 1 tsp, or even espresso! See recipe notes for more ideas.

Thanks for bringing this up. The reserved liquid freezes well. It can be used in smoothies or cooking. One trick is to freeze it in an ice cube tray, then pop them out into a freezer bag to have on hand. It's a great way to add flavor and a little sweetness to your smoothies!
