Umami is the taste of flavor, it joined the others (sweet, salty, sour and bitter) only in 1985. It is young and perhaps the most difficult to map, but it is also the one that adds depth to what we swallow and shakes a deep affective memory.
An electronic diffused among the 17 instrumentalists on stage binds the acoustic sound traces and urges the journey on the time of savoring, an intimate and transitory act, strong and incontestable. A research that, in order to orient itself through what is unknown to the visible, appeals to the perceptive multiplicity within our senses and opens up to the narration of an inner journey of discovery.
The culture of taste (as a practice of "feeling further") hides a subversive potential: it teaches us an ecology of valuations that resists the daily market of identities.

Umami è il gusto del sapore, si è unito agli altri (il dolce, il salato, l’acido e l’amaro) soltanto nel 1985. È giovane e forse è il più difficile da cartografare, ma è anche quello che aggiunge spessore a ciò che ingoiamo e che scuote una profonda memoria affettiva.
Un’elettronica diffusa tra i 17 strumentisti in scena rilega le tracce sonore acustiche e sollecita il viaggio sul tempo dell’assaporamento, un atto intimo e transitorio, forte e incontestabile. Una ricerca che, per orientarsi attraverso ciò che è sconosciuto al visibile, fa appello alla molteplicità percettiva interna ai nostri sensi e che si apre alla narrazione di un viaggio interiore di scoperta.
La cultura del gusto (come pratica del “sentire ulteriormente”) nasconde un potenziale sovversivo: ci insegna un’ecologia di valorizzazioni che resiste al mercato quotidiano delle identità.
