I just used this recipe and the result was excellent. I haven't enjoyed poached eggs as nice for years! I have the kiss of death when cracking eggs to fry or poach. 2 out of 3 always have broken yolks. But this method produced beautifully unbroken yolks. Delicious 😋 Thanks.

Hi there. There is nothing quite like the texture of a sous vide poached egg. I’m so glad that my video has helped you in some way. That’s exactly what I set out to do when producing content for the TM6. I do recommend trying more sous vide cooking if you haven’t already. May I say thanks for taking the time to leave a comment and supporting my channel. It really does help 🙋🏻‍♂️😀RTF

This just doesn't make nice poached eggs, I'm afraid. It makes for a super consistent egg texture-wise right through both white and yolk (some may like this, some may not), and it of course tastes great, but in terms of presentation, it looks like two wet oysters on the plate - with a lot of that translucency that one associates with undercooked egg, even if as I say the cook-through temperature is fine. I've only done this a couple of times, but the results are the same; maybe I'll try again with some vinegar in the water to help set the white more firmly. Compared with other thermomix techniques, I'd say this certainly makes for a more natural look than poaching 'dry' in an egg-poacher attachment; and of course it means less loss of egg white than when one just puts them in to the water over the blade cover. But ultimately, I think one needs a combination of heat contact to the outside of the egg *and* keeping of the egg together, and for that, I think one's better off cooking the eggs the old fashioned way - and using the Thermomix to do the Hollandaise!
@RichieTheFoodie
@RichieTheFoodie 8 месяцев назад
Hi John, wow, thanks for taking the time to write your post. You make some very valid points here. The best thing about poaching using this method is the consistency, like you said. It’s perfect every time. In terms of presentation, again, I agree, they don’t look very appetising to some. To take the white where you really want it, you end up over cooking the yolk. I still love cooking and eating eggs this way, but to be honest, my wife won’t touch them - I then have to resort back to the pan on the hob. Have you tried anything else sous vide in the thermie? Thanks again for stopping by, I appreciate your support 🙋🏻‍♂️😀RTF

@@RichieTheFoodie At the moment I’m like a newly wed, but I realize that I have lots to learn. The Cookidoo page is somewhat confusing (and not really coded great) and some really ordinary dishes are missing which is a bit surprising. For example I’m going to steam fish tonight, but I can’t find instructions how to just steam it and not picking a recipe with the wrong type of fish. Like, I have a few flatfish fillets and their cooking time isn’t the same as sea bass och salmon. Perhaps I need to read the cookbook that came with the machine.
@RichieTheFoodie

@@NoWay23548 it takes a while to get used to everything. The cookbook will show you how to steam, but I always Google the cooking times for steaming fish depending on the type. Hi Melinda. To be honest, on a few occasions, I have experienced the tm6 dropping water temp and not getting back up to temp, I’m unsure why this happens. @@RichieTheFoodie FYI it also depends on how old your eggs are. The older they are, the more the egg whites thin out, making them runny, hence harder to firm up. Anyhow, this method is still super smart, though I'd say is a hybrid between poaching and "perfect egg", due to the use of a thermocirculator.

@RichieTheFoodie
@RichieTheFoodie 2 месяца назад
@@mahadewiiii ‘grandma”s egg poacher makes them better’ 🤣 That’s absolutely brilliant, you can’t fault her for her honesty hey. Sous vide egg poaching is an art to be fair. For me, the whites aren’t quite set enough for the perfect egg. If you cook to a higher temp to set the white, the yolk overcooks. The only way to solve this is actually crack the egg into a fine strainer, this strains away the loose yolk that’s difficult to set. You’d then of course have to sous vide the egg out of the shell. I hope this makes sense! I have to say, because of this, I do prefer the hob for poached eggs now. You’re very welcome for the reply, if someone takes the time to watch my content and leave a comment, I really appreciate it so it’s the least I can do, so thanks! Keep commenting lol.
