It’s still about as sharp as when I first got it..I’ve really only used it a handful of times to break down a bit ribeye roast/NY loin tho The initial sharpness was kind of weird tho cos it did feel sharp..but like a “thick” sharp...like a sword or kitana or something.. not razor sharp like say..a brand new brisket knife or chef’s knife ..but I’d say it pretty much retained that same type of edge ..”thick sharp” it originally came with.. I thought about trying to sharpen it with some whetstone that I have..but I’m not confident enough in my abilities to sharpen it without messing it up..so I just let it be. Honestly tho..I feel like these are used best as intended ..which is basically to break down a big roast one heavy chop at a time..not so much for fine cuts like a cooked steak or something
