I don't agree with fish sauce either. It makes the broth darker and sour. So in Vietnam, I only use it for soup with fish, not meat.

Uncle Nick also learned a lot his previous attempts which makes his Uncle title well deserved. Each time he improved and started making fewer mistakes. If he tries to impress Uncle Roger again in the future, hopefully he’ll keep his uncle title since we have witnessed Uncle Roger revoke uncle titles before.

Vietnamese from the south, we like to mix the broth with hoisin and siracha. It’s pretty normal. And lime usually put on the side so when we like to squeeze them in we don’t get burn from the hot broth. I know it’s for presentation but in vietnam no one garnish it like that 🫶 Overall everything is correct Good job Nick

In Vietnam we eat "phở" with more spring onions. And people also add chilli, pickled garlic and srirancha to the broth. Good time seeing people treat "phở" like a holy dish, but it's quite common❤

From a point of view of a Vietnamese, I think Nick did very good job in cooking and Roger did pretty good job in review as well. Yes, we don’t bland noodle in broth, should be a separate pot of boiling water, drain well, then add very hot broth into the noodle bowl with thin sliced raw meat and yes, don’t forget green onion, white onion and cilantro. 😊

Your pronunciation is good, but the “o” in pho is actually “ơ” and pronounced like “uh”. Sooo it should be fuh but with your current tone (slightly higher when pronouncing the vowel…I hope that makes sense). The Vietnamese language is very dependent on tone, enunciation, pitch because it is monosyllabic (all words are one syllable). It’s influenced by the Latin alphabet which is in part why we are one of the only Asian languages using letters. If you know the phonetic sounds, Vietnamese will become easier. The Vietnamese spelling of “Phở” has the horn which makes the o sound unrounded like uh and the question mark makes the tone higher.

My brother was really good friends with someone from Vietnam for awhile and Nick actually does pronounce pho correctly. Lol. According to him, at least, and I think I would trust a real Vietnamese person to know how to pronounce pho. Pho is SO good! I feel incredibly lucky because there's an actual authentic Viet restaurant near me and the food is always delicious. I first went when bro's friend was staying with us for a month (they went to boarding school together and friend wasn't able to go home to Vietnam for the holidays, so he stayed with us instead) and now I love Vietnamese food.

I should point out that legit Pho in Vietnam came with bean sprout and basil separately. Only sliced onion and sliced green onion is put in Pho and you will put bean sprout and basil later, as some customer just want to eat Pho without them. Also people in Vietnam dipping meat in sauce and some do add sauce to the broth too. I don't think Roger right about this but on the other hand he's right about the part that sauce will alter the flavor of the broth

I’m Vietnamese and absolutely love pho. For a bit of clarification pho is a classic Vietnamese dish and is known for it’s hot broth that is extremely hot and is poured on to raw meat that instantly cooks because of the broth. We also roast our spices to add extra aromatics and more flavour, I’m not sure about others but I found that my family uses slightly wider rice noodles and the additional pork meatballs. 😀

As a people who live in Ha Noi (capital of Vietnam and the best place to find Pho) beef is more soft for a rare cook by broth like that, pork will usualy go hard and less fit with the dish than beef. Không đánh giá nhưng thường thịt lợn ko hợp và dễ bị bã khi ăn tái như vậy :) .

In Canada, there are plenty of pho restaurants around there, I am not sure how authentic they are, but they do taste exellent to me. Since I don't always see proper chinese noodle restruants, pho is what I choose as an alternative. As a chinese student, pho has been my life saver for years! My favorate combo is brisket, raw beef and meatball in the classic beef broth, and extra cilantro.

zietto Niccolo', I totally agree with flavoring the noodles but dip some broth into a sauce pan specifically for that reason. Also, like Uncle Roger said, where were the scallions and cilantro (and maybe even some bok choi)? I will recognize uncle title but in all lower case &/or diminutive! 😉
