An old Italian mate told me years ago, If you fillet it and put in the fridge covered in milk for a day or two, the mud taste comes out. Then salt it up, Bewdifull.

Well done mate nice & slow to tire the fish out rather than just trying to skull drag it in. They are a great sports fish, that's why it is so popular across the globe. If you don't wish to return them to the water (Legal in NSW, ACT & W.A) I strongly suggest killing it quick, fillet, skin & cook it up just be aware of the bones.
