What about the keyword competition? Most of those tags are really high competition. A lot of Etsy RU-vidrs says to aim for lower comp with high volume keywords?
Great info but I thought it’s against Etsy policies to put in your own website link like this store you are using as the example. Can you tell me if this is correct?

Nope. Its always easier to blame them instead of looking at your own wall, doesn’t mean its true. Put the work into understanding it and you will get views/sales. I just use ads in one shop, there is get about 30% sales from ads. My other shops are going well without any ads at all.
Some mentors say keyword stuffing in the title and description is not allowed by etsy and etsy doesn't rank these listings but when I am searching everyone on the first page is stuffed with keywords. I read put keywords at the beginning of the listing makes sense because Google will crawl the first 160 characters of the item description and use it to create the meta description for the listing page in their search engine. Isn't it true?
Letting people know you exist outside of etsy isn't a problem. Telling people they could save money by buying from you orr telling them they can get a better deal by buying somewhere else that isn't Etsy.
no, talking about your entire catalog wouldn't be against terms of service, what WOULD be against terms of service is telling them to go there to buy instead of buying on etsy.
