I think a transmission was problem. Engines make power, Transmission dictates how the power is put down to pavement.

It kinda makes it more amusing the fact neither of them have any clue about how to upgrade cars, got plenty of mods to do fast builds, but no idea how any of them work, so you end up with silly builds. :P I mean, the V12 Comodo picked, has the option for twincharging, with a plethora of different kind of turbos, including quad turbo, and even 3 kinds of superchargers.

Engine, transmission, suspension, tires. You will need to get cooling & air flow in there as well. Maybe move tires up the list. 🤔

When you remove the doors and any other parts, there isn't as much support to the body so the vehicle isn't as stable.

I think the way it messes with balance is through the weird airflow in the gaps.

Meh, not that much really, the frame of the car is the important part. Body panels are useful in crashes but they don't give as much rigidity as you seem to believe. The loss in weight compensate for the lack of rigidity

add weight to the back so the tires grip instead of spin, and transmission upgrade should've been all you need

Here's a thing. With the back heavier, the car is more prone to drift and spin out. And transmissions probably has something that limits acceleration called traction control.

His v12 doesn't put out as much torqe as a v8 so therefore he has a lot more wheel spin with his v8 than your v12 cause the v12 is built for speed not torqe
