Toughness decreases the amount of damage taken from sources that would have done lots. Diamond and netherite both have toughness, a full set having 8 and 12 respectively. This may not sound like a lot, but that means hard hitting damage sources do 50% less damage to someone in netherite than in diamond.
Leather armor steve being on half a heart after having his entire skull exposed and all limbs torn off is literally the indominable human spirit at its finest.
Fun fact: diamond and netherite actually give the same amount of protection, only netherite has more durability and reduces knockback. Also, unless you have feather falling, armor doesn't protect you from fall damage
Netherite actually gives more protection, its just visually same armor points proof: prot 4 netherite tanks 3 hits from warden, whereas prot 4 diamond tanks only 2.
In Minecraft, when you have half a heart of life left, you're still alive, but Steve in leather armor didn't look very alive when he had half a heart. 💀
In fact armor doesnt protect against fall damage unless enchanted with feather falling. It doesn't protect against burning, suffocating, lightning or magic either

That's because netherite is not the same defense as diamond and durability do your research then come back 1) Defense Points: Each piece of netherite armor contributes to damage reduction in Minecraft. Every defense point reduces damage by 4%, with a maximum cap of 80%. Netherite armor outperforms diamond armor by three defense points per piece, yielding 20 defense points (80% damage reduction) for a complete set

But the hearts are literally fake. He just wants as much watch time as possible, that's why the netherite armor won. Plus, it's obvious anyway that the strongest armor is going to be the winner.

I think the leather one was worse. Hanging on with half your body missing, internal organs all messed up, then you bang your head and it just doesn't finish the job...
