Upside down Apple & Peach cookies 🍎🍑

These are beautiful, delicate, & crisp cookies. They are quite beautiful, and they have a surprise at the bottom. 🥰
The only “problematic” thing is waiting on the cookie dough to rest 🤷🏻‍♀️
The ideal time is 24 hours. But eight hour chill time will do. If your in a pinch give it 30 minutes in the fridge (at least🤣)
I hope you enjoy these Upside Down cookies 🥰
Ingredients:
For cookies:
1 3/4 cup of all purpose flour
1 tsp salt
1 tsp baking soda
1 tsp vanilla extract
1 whole egg + 1 egg yolk
3/4 cup unsalted butter
(Divide the butter in half, to brown it)
Fruit:
1 apple (I used a Honey Crisp spple)
1 peach
For parchment:
Brown Sugar 1 tsp per mound
Cinnamon to taste
Instructions:
Measure out all of your ingredients. Take one half of the butter and bring it to a simmer in a pot on medium heat. Cook it till it becomes golden brown, then remove from heat. Allow the brown butter to cool completely before moving forward. Now, In a large mixing bowl add all of your butter, add your sugars and mix.
You do not want to over mix!
Once it comes together add your eggs, and vanilla, mix.
Now to your flour, add your salt, and baking soda.
Add your dry ingredients to your wet ingredients, and mix well. Mix until you get a smooth dough.
Now!!! The “hard” part you are going to want to let the dough chill in the fridge for a few hours. Preferably 24 hours. (Crazy. I know) but the dough spends that time absorbing all of the liquids and it just helps the dough 🤷🏻‍♀️ (science)
If you’re not that patient, and I have been there myself 🤣 give the dough at least an hour in the fridge.
When you’re ready to bake!
Prepare your baking pan with parchment paper. Add your tsp of brown sugar in six mounds. On top of your brown sugar add some cinnamon. Now, slice your fruit and arrange them in four to six slices on top of your sugar.
Now, take a heaping tablespoon of cookie dough, and form it into a round ball and flatten. Place the dough over fruit and sugar, and lightly pat to adhere the dough to your fruit.
When you’re ready, bake at 350 degrees till your cookies are lightly golden around the edges.
Remove them from the oven, and allow them to cool.
Remove your cookies from the parchment paper and enjoy! You can dust them with powdered sugar before serving, you can also make them into ice cream sandwiches.
They are just delicious!
