I consider this as one of the most important part of Wada pav as it gives the hot garlicky taste. Some Wada pav stall owners add bread to their garlic chutneys to increase the volume, but adding bread reduces the shelf life of chutney. Sharing authentic Wada pav garlic chutney recipe with you. You can store the same in refrigerator at least for a week.
Vada pav Lehsun chutney
Ingredients-
Oil- 4 to 5 TSP
Garlic (with skin) - 100 gms
Bedgi dry red chillies- 40 no. (60 gms)
Dry coconut - 50 gms
Rock salt-20 gms
Kashmiri red chilli powder-8 gms
Boondi choora - 150 gms
Method-
Heat oil, add garlic, red chillies and dry coconut slices. Saute for 2 mins. Turn off gas. Add Kashmiri chili powder , salt and boondi. Cool the mixture. Then grind the mixture( not too fine). your chutney is ready. Store chutney in airtight container.
