I'm not sure what she does, but to keep the shape and reduce spread you can make sure it's cooking at the right temperature - too low and they won't firm quickly enough. Also don't over mix or the air will cause imperfections. Make sure to chill the dough. Lastly, you can try cutting them partway through baking if you see they are spreading too much and they need saving.
Can I ask why you put a squiggly line in the center before you fill it in? I have tried to figure this out and I don’t get it. By the way me and my family loved your whole Diwali series. We thank you for thinking of us 💙💙
