Roquefort and sauternes is such a perfect pairing. I've even gotten people who swore they hate blue cheese to change opinions after trying them together. Great video!

Another great video full of useful information. One question I’ve had for sometime: if you open a Sauterne or an Ice Wine (or any other dessert wine) that is much higher in alcohol content, will they keep longer than ordinary whites and reds? For example, if I open a Port, can I simply put a wine stopper in it and keep it at room temp for another month or two? I’ve heard differing opinions about the shelf life for these dessert wines…

Ice Wine actually has low alcohol content (8%) so they will last about 7-10 days in the fridge after opening. When you go up to Port wines (20% abv), they can last up to 1-2 months after opening (and to make it last longer, you would want to store it in the fridge. Madeira - you can do whatever you want to the wine and it'll be fine.

Can you get good port wines in the $5 - $10 range? I got one before that was cheaper and it was absurdly cheap.

They are typically one dimensional and not the best quality. But good if you just want something sweet & strong.

Compare to Moscato, Late Harvest, Sauternes and Ice Wine. Could rate the sweetness level?

You ranked them in the correct order. Moscato would be the least sweet and then Late Harvest. Sauternes can range from 120-220g/L of Residual sugar and Ice wine ranges from 160-220g/L

@@TheSommNextDoor I just tried the Riesling, the sweetness probably the same as Moscato suitable for food that light in taste or else it will be too light wine that has little alcohol ;and Rieussec 2009, it's sweetness is of another level.

@@TheSommNextDoor By far I find Sauternes is more fragrance on the nose and has taste complexity. Moscato, Late Harvest towards refreshing with slight sweetness with little tanning taste. Ice Wine is super rich I felt it could be used to make some sort of dessert than really drinking it and Sauternes is delicious and has very nice aroma and complex smell, it is like XO but it is subtle kind.
