Spaghetti Carbonara
1 pack spaghetti (uncooked)
150g pancetta / bacon / meatless bacon (chopped)
1/2 cup cream
1/2 cup pasta reserve (plus more to moisten before serving)
3 large eggs
1 ½ cups Parmesan cheese (freshly grated, plus more for garnish)
1 teaspoon pepper (freshly ground)
1/2 cup coriander (chopped)
200g Swiss mushrooms (sliced)
salt and paprika powder to taste
Method
1. Cook the spaghetti al dentre in a rolling boil
2. Chop all the ingredients as mentioned.
3. Saute the pancetta and bacon and remove using a slotted spoon. Retain the fat to cook the mushrooms. Add stock and 50g of unsalted butter (optional)
4. Whisk the parmesan with the eggs and set aside.
5. Once mushrooms are cook (no more liquid), add in the pasta that is still hot, directly from the pot and then pour in the egg mixture. The pasta should not be boiling hot at this point.
6. Mix well, adding the cream and some of the pasta reserve to create a sauce.
7. Garnish with coriander and serve.
8. If it is going to sit for a while, add some more of the warmed pasta reserve before serving.
Serve with parmesan crisps and brushetta or caprise
