In this video, I’ll show you how to make a delicious and easy Vangi Bath (Brinjal Rice) using a pressure cooker. This quick one-pot meal is packed with flavors and perfect for lunch or dinner! If you love simple, tasty, and homemade Indian recipes, this one is for you! 🍚✨
Ingredients:
-Rice - 1 cup
-Onion - 2 (chopped)
-Tomato - 1 (chopped)
-Capsicum - 1 (chopped)
-Potato - 1 (diced)
-Brinjal - 2 (chopped)
-Dry Red Chili - 2
-Curry Leaves - a handful
-Oil - as required
-Salt - to taste
-Mustard Seeds - 1 tsp
-Chana Dal - 1 tsp
-Urad Dal - 1 tsp
-Vangi Bath Powder - 2 tsp
-Turmeric Powder - ½ tsp
-Tamarind - a small piece (soaked in water)
Instructions:
1. Heat oil in a pressure cooker, add mustard seeds, chana dal, and urad dal. Let them splutter.
2. Add chopped onions, tomatoes, brinjal, capsicum, and potato. Sauté for 2-3 minutes.
3. Add turmeric powder, Vangi Bath powder, tamarind water, and salt. Mix well.
4. Add the washed rice and 2 cups of water.
5. Close the lid and cook for 2 whistles.
6. Let the pressure release naturally. Open the lid and fluff the rice gently.
