These Veg Soya Nuggets are make with soya chunks which makes them rich in protein too!

Recipe :
Veg Soya Nuggets
Preparation Time: 20 minutes
Cooking Time: 15 minutes
Serves: 3-4
Ingredients:
2 cups soya chunks
1 large boiled potato, grated
3 tbsp ketchup
1 tsp red chili powder
1 tsp black pepper powder
1 tsp garlic powder
1 tsp onion powder
3 tbsp cornflour
4 cups veg stock
1 tsp soya sauce
1 tsp vinegar
For coating:
¼ cup flour
1 cup bread crumbs
Oil to fry
Method:
Boil the soya chunks in stock, soya sauce and vinegar for 4-5 minutes. Drain, squeeze lightly and grind coarsely.
Add all the remaining ingredients and bind to a dough. Shape into nuggets.
Add 1 cup water to the flour to make a slurry.
Dip the nuggets in the slurry and roll in the bread crumbs.
Rest the nuggets for 10 Minutes.
Fry the nuggets in medium hot oil to a crisp golden colour.
Serve hot!
