This Vegan Cheese is made without cashews and nutritional yeast. A soft, crumbly baked vegan cheese made from almond flour combined with fresh rosemary and garlic to create a smooth and creamy plant-based cheese that you can easily make at home.
Just a handful of simple ingredients combine into a delicious plant vegan cheese.

Ingredients
*1cup=240ml, 1Tbsp=15ml
*No Substitution Suggestions Unless Specified.
• 1 ½ cups almond flour (or 1 cup blanched almonds)
• 4 tbsp lemon juice
• 3 tbsp olive oil
• ½ cup water
• 2 large cloves garlic
• 1 ¼ tsp sea salt
• 2 tbsp fresh rosemary (or basil, thyme etc)
Instructions
1. Add all ingredients to a food processor and process until thick and creamy.
2. Place a (layer of) cheesecloth in a strainer and spoon the mixture into the cheesecloth. Secure the ends with a rubber band so that the contents form a disc. Let rest in the refrigerator for at least 12 hours.
3. Remove the cheese from the cloth and transfer it to a greased baking dish or a parchment-lined baking sheet. Shape into a disc. Bake at 180˚C/350˚F for 40 minutes until golden.
4. Let cool, drizzle with olive oil, and serve with crackers, bread, or fruit.
