These are my two go-to recipes that are easy to whip up in minutes, and the fudge icing can be made while the cupcakes are baking. You can literally have yourself 2 dozen cupcakes in less than 2 hours!

I made 72 of these vanilla cupcakes with vanilla icing for a friend's wedding (and I have never baked a vegan cake before) buy these were soooo easy and came out beautifully and everyone loved them - including the children who can be so fussy. Thank you Gretchen! 😊

I made the vanilla and it was exactly like you said. The best vanilla cake I have ever had. I used golden flaxseed and it didn't even show! Some vegan recipes just use flax, some vinegar and some cornstarch; your recipe is the perfect blend! I have had a hard time finding a vanilla recipe that I liked but my search has ended. I have a few questions and I'll ask it on the blog!!!!

Oooh I'm salivating, these look so good! Is there an alternative you can use instead of the flax seed? And would this also work with a gluten free flour mix or even cornstarch? Oh, and does it have to be milk or could it also be juice or even just water?

Hi Gretchen! Would like to ask you, which is the best vegan recipe for vanilla and chocolate cake that is light and fluffy in texture? I noticed there are many different vegan cake recipes and hence I'm confused on the end result of the vegan substitutes such as flax paste, aquafaba etc. please help as I need to make a very spongy, light and fluffy cake!!

Gretchen, my Goddess, where is the measurements for the vegan frosting. I am wondering if I could also exchange the coconut oil for regular oil and if it still crusts up like your other non vegan fudge icing. I use them on my Rose cones that have brownies inside ice cream cones. They are truly a hit! If it does crust like the other icing, then I might have found the one icing I could put on my vegan coffee chocolate cake that will be sitting in the heat in the late afternoon down here in AL for 3 hrs.

Hi Thank you! While I do not do much gluten free baking, those who do and follow my recipe have told me it works great with a straight up sub for a GF baking mix

Thanks for the recipe!!! Looks really yummy!!! Vegan white cake is harder to make than chocolate ones I find in terms of substitutions...could that vanilla cupcake be bake as a whole cake rather than cupcakes? Thanks a lot!!!

You can use all vegan butter if you cannot find shortening, but I have been told that Stork margarine block is good and most people use TREX

So I made these and some came out with a vinegar taste to them I mixed. The batter so I was confused and I know it sounds weird but I kept getting a lemony flavor but I did exactly what the recipe said. Did I let the milk and vinegar sit tiling maybe ?

Oh No! That is really strange! That has never happened to me. I've let the vinegar/milk sit for over 30 minutes, but that would not intensify the flavor of the vinegar in any way. Did you measure correctly? But also you say "the batter" tasted that way, did the final cupcakes come out great?

@@GretchensVeganBakery I thought I measured correctly. I will have to try the recipe out again and see if it might have been that. When the cupcakes where baked it had the vinegar taste in some parts of the cake. Some cupcakes didn’t have the sour taste but others would so I’m thinking maybe I didn’t mix it long enough? I did it in a stand mixture and Mixed it by hand before adding them to the cupcake tins.

In the vanilla cupcake recipe, i must use cake flour and NOT all purpose flour, is that correct?? Also, for this recipe and your Vegan Buttercream recipe, is it necessary to use the high ratio shortening? Can the shortening be replaced by more butter or anything else? I’m asking because you mentioned it helps with styling purposes and what not, but i only care about the texture and flavour. Does it also contribute to overall taste and texture? I can get my hands on the high ratio shortening at bulk barn in Canada but it is not the sweetex brand, although i assume it would work the same if not very close. Really hope to hear from you as i am looking SO forward to making the vanilla cupcake with either the icing in this recipe or your buttercream one ( www.gretchensbakery.com/vegan-buttercream/ ) And one more thing, what's the major difference between the icing in the above video and your buttercream one in terms of texture?

Hmm, well not technically (yet) but ~its quite easy to make any FRUIT pie vegan as long as you use vegan butter or shortening for the pie dough. You can use this recipe here www.gretchensbakery.com/apple-pie-recipe/

Hmm, Im not sure. Did you use all the same ingredients as I did, and mixed same way? Its hard for me to imagine what you mean though, dense meaning heavy? But soft? Mine come out so light- this is really light textured recipe so maybe the measurements were off?

It wasn't light and airy like yours but heavy and dense. I weighed all my ingredients. i used two tablespoons of pineapple juice and minus two tablespoons from the milk amount and i used Margarine.

I have tried using a tablespoon of vinegar in different cake batter recipes and it always ends up having an aftertaste or smell. Is there a way I can use less of the vinegar to get rid of the aftertaste and smell?

yes sure, you can add less. I use apple cider vinegar too, it is more subtle - white vinegar is more harsh

I have tried both white and apple cider vinegar. The acv is more potent so the taste and smell is stronger but I wouldn't mind using it as long as there is no aftertaste. How much less would I be able to use without messing up the results? A teaspoon?

in the USA I find it all easily in my local supermarket, Im not sure where you live but ask your market if they carry (or will they carry) some vegan products, the more people that ask they will do it!

it is the egg replacement in this recipe, so like any recipe you cannot just take out an ingredient (no matter what it is) and expect a good result. If you do not care about the recipe being egg free you can use this recipe instead: www.gretchensbakery.com/rainbow-vanilla-cupcakes/

Feedback: I don't mind at all some vegan recipes. It's good to try things and variety but now it's all vegan. When I found your channel it was so great, by far my favorite. You seemed happier, you had the bakery and you had a ton of non vegan recipes. Now you seem more wooden and formulaic (that may be my impression only). If now you're aiming to a new audience I wish you the best of luck in this new path because hey! Why not? But this dinosaur's days in this channel are over after a few years. I learned a lot from you and some of your recipes became a permanent part of my recipe book. Thank you Gretchen.

Gretchen is following her heart and conscious by making all her recipes and that's what makes her truly happy. She has her old recipes if you want and as she says you can always unvegan her new stuff.

Of course, she has the right to change course if that's what she wants to do.She'll always find an audience for that, the same way I liked her old channel way better, not just because of the vegan recipes but overall I liked it the way it was. Just a preference, I'm not going to tell her how to live or run her channel, there's nothing wrong with what she does. I'm just not into it anymore. And btw good point about "unveganing" recipes.
