I'm allergic to soy products, will be in the hospital from small amounts, what can you use instead of tofu? I'm just starting my vegan journey at age 60, after years of military service and injuries. I want to repair my health through a plant based lifestyle. Thank you in advance for your help.

I was about to comment about this until I saw yours, and Rochester is my home town too! But I moved to Atlanta 11 years ago cause I was sick of all the snow.
You're from Rochester?!?! I had to comment cause that's my home town! And yes I agree you're less likely to find vegan shrimp anywhere there unless there was an Asian market that I don't know about. However I've moved to Atlanta 11 years ago and discovered veggie shrimp at an Asian market. Lots more options here!
This one actually looks better than the ones I’ve seen. Most just look like vegetables in a dish or pot which is essentially what it is, a vegetable and potatoes boil. I’ll still eat my seafood. But it’s a good recipe, for people who are vegan
