Here is my vegan Thai green curry recipe. If you’re not vegan then you can add some meat and fish sauce.
If you are vegan make sure you get a vegetarian curry paste which doesn’t contain any shrimp paste. All regular Thai curry pastes contain shrimp paste.

I saw this video two days early and basically memorized it, I bought all my fresh veggies, chopped them up and had everything ready. When I added the green curry paste I felt a fishy smell and turns out the paste was not vegetarian and had shrimp paste in it 😩😭 I was soooo disappointed, please everyone check the ingredients in your curry paste before cooking!

My husband is Indian but Thai curry is his favorite! Don't tell his mom 😂 I will make this with some crispy firm tofu added. Does anyone know if jaggery is the same as palm sugar?

I would say yes if jaggery is suitable for vegan, In Thailand we use cane sugar in our food too 🙂
