Tofu is not fermented soy, but it is still a great Plant base protein that goes delish with this recipe. Tempeh is made from fermented soybeans. Nutritionally, tofu and tempeh carry very similar nutrient profiles, and either would make a beneficial addition to a healthy diet. However their nutrient profiles including protein, carbohydrates, fibre can vary significantly depending upon the brand since their processing methods differ. So the consumer needs to read the Nutrition Facts Table to see the nutritional content of the product.
